Tips for success
For the best flavor, choose a high-quality beef consommé and a rich brown gravy. If you have time, homemade gravy made from beef drippings will take this over the top.
The butter adds a final touch of richness, so don't skip it. Vidalia onions are key for their sweetness; if they're not in season, use another sweet variety.
This recipe is perfect for meal prep. Cook the brisket on the weekend, then store it in the fridge for quick dinners throughout the week. The flavors only get better as they meld.
When reheating, add a splash of beef broth to loosen the gravy. The brisket also freezes well, so you can have a ready-made dinner on hand for busy nights.
Variations
- Mushroom Brisket: Add 8 oz sliced cremini mushrooms along with the onions. They'll soak up the gravy and add an earthy depth that pairs beautifully with the beef.
- Spicy Brisket: Add 1-2 sliced jalapeños and a teaspoon of smoked paprika to the pot. The heat balances the sweetness of the onions and adds a smoky kick.
- Beer-Braised Brisket: Replace half of the consommé with a dark beer, such as stout or porter. The beer adds a malty, slightly bitter note that complements the beef.
- Herbed Brisket: Tuck a few sprigs of fresh thyme and rosemary around the brisket before cooking. The herbs infuse the gravy with a subtle woodsy aroma.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a covered pot over low heat, stirring occasionally, until hot. Add a little beef broth if the gravy has thickened too much.
Store leftover brisket and gravy in an airtight container in the refrigerator for up to 4 days. The onions will continue to meld with the gravy, deepening the flavor. Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.
You can assemble the entire dish the night before: layer the brisket, onions, consommé, gravy, and butter in the slow cooker insert, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed. You may need to add 30 minutes to the cooking time since the pot is cold.
Serving ideas
Serve the shredded brisket on toasted brioche slider buns for a playful, sandwich-style dinner. Pile the meat high and spoon extra onion gravy over the top.
The sweet, buttery buns complement the rich beef beautifully. For a heartier meal, serve the brisket over mashed potatoes, egg noodles, or creamy polenta, with the gravy spooned generously over the top.
This dish also shines as a filling for tacos, topped with a little shredded cheese and pickled onions. Or, for a low-carb option, serve it over roasted vegetables or cauliflower mash.
The leftovers are just as delicious the next day, either reheated or cold in a sandwich. However you serve it, this brisket is sure to become a family favorite.

French Onion Brisket: Easy Slow Cooker Dinner

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 2 medium Vidalia onions, thinly sliced
- 1 cup beef consommé
- 1 cup rich brown gravy
- 4 tbsp unsalted butter, cut into pats
- 6 toasted brioche slider buns
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Pile the thinly sliced Vidalia onions over the top of the brisket, covering it as evenly as possible.
- Pour the beef consommé around the base of the brisket, being careful not to wash the onions off the top. The liquid should come about a quarter of the way up the sides of the meat.
- Pour the rich brown gravy over the brisket and onions. Dot the top with the pats of unsalted butter, distributing them evenly.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Do not lift the lid during cooking. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Remove the brisket to a cutting board and let it rest for at least 10 minutes. Then shred the meat with two forks, discarding any large pieces of fat.
- Stir the caramelized onions into the gravy in the slow cooker. Return the shredded beef to the pot and toss to coat with the onion gravy.
- Toast the brioche slider buns until golden and crisp. Place a generous mound of the shredded brisket on each bun and spoon extra onion gravy over the top.
