Tips for success
For the best texture, use a batter that is not too thin—it should be similar to pancake batter. If it’s too runny, add a tablespoon of flour.
When cracking the egg, do it into a small bowl first to avoid shell bits and to keep the yolk intact. Gently slide the egg onto the batter, being careful not to disturb it. This ensures a beautiful presentation.
To make the sweet mayo, mix regular mayonnaise with a little sugar or honey until smooth. Adjust sweetness to taste. For extra flavor, add a pinch of paprika or garlic powder.
The drizzle should be applied just before serving to keep the bread crisp. If making ahead, reheat the breads in a toaster oven to restore crispness, then add the mayo and parsley.
Variations
- Spicy Gochujang Twist: Add 1 teaspoon gochujang (Korean chili paste) to the batter for a subtle heat. Top with sliced green onions instead of parsley. Drizzle with a mix of mayo and gochujang for a spicy, creamy finish.
- Ham and Cheese: Replace the bacon with diced ham and use sharp cheddar cheese. The ham adds a milder, smoky flavor. Omit the parsley and top with a sprinkle of paprika for color.
- Vegetarian Delight: Omit the bacon and add sautéed mushrooms, bell peppers, or spinach. Use a plant-based cheese if desired. The vegetables add moisture and flavor, making the bread even more satisfying.
- Sweet Cinnamon Version: Add 1/2 teaspoon ground cinnamon and 1 tablespoon brown sugar to the batter. Skip the bacon and cheese; instead, after baking, brush with melted butter and roll in cinnamon sugar. Drizzle with a simple glaze made of powdered sugar and milk.

Store leftover egg breads in an airtight container in the refrigerator for up to 3 days. To reheat, place in a toaster oven or regular oven at 350°F (175°C) for 5-7 minutes, or until warmed through and the exterior is crisp.
Avoid microwaving, as it can make the bread soggy. The egg yolk will firm up when reheated, but the flavor remains delicious.
The batter can be prepared up to a day ahead and stored in the refrigerator. The bacon can be cooked and crumbled in advance. Assemble the tins just before baking. Baked egg breads can be frozen for up to 2 months; thaw overnight in the refrigerator and reheat in the oven.
Serving ideas
Serve the egg breads warm, straight from the oven, with the sweet mayo drizzle and parsley. They are fantastic on their own or with a side of fresh fruit or a simple green salad. For a heartier breakfast, pair with a cup of coffee or a glass of milk. The breads are handheld, making them perfect for a quick breakfast on the go.
These egg breads also shine at brunch gatherings. Arrange them on a platter with extra sweet mayo on the side for dipping. They can be cut in half to show the beautiful yolk and layers.
The combination of sweet and savory is universally appealing, and they are sure to be a crowd-pleaser. Enjoy them fresh for the best texture and flavor.

Korean Street Egg Bread: Fluffy Bacon Cheddar Breakfast

Ingredients
- 240 ml sweet vanilla pancake batter
- 4 large eggs
- 80 g diced bacon
- 80 g shredded mozzarella
- 1 tbsp chopped fresh parsley
- 2 tbsp sweet mayonnaise
Instructions
- Heat the oven to 375°F (190°C). Grease four oblong egg bread tins or a muffin tin generously with butter or oil. If using homemade batter, whisk together flour, sugar, baking powder, salt, egg, milk, and vanilla until smooth. If using prepared batter, stir it well.
- Pour the batter into each tin, filling them about halfway. The batter should not reach the top because the egg and cheese will add volume.
- Carefully crack one whole egg into the center of each tin, keeping the yolk intact. Sprinkle the diced bacon and shredded mozzarella evenly over the egg and batter.
- Place the tins in the preheated oven and bake for 12 minutes, or until the cake is puffed and golden brown and the egg whites are set but the yolk is still jammy. If a fully cooked yolk is preferred, bake for 2–3 minutes longer.
- Remove the tins from the oven and let the breads cool in the tins for 2 minutes. Then transfer to a cooling rack. Drizzle with sweet mayonnaise and sprinkle with chopped parsley before serving.
