Before you start

Before starting, gather all the ingredients and equipment. Make sure the water and milk are warm, but not hot, to activate the yeast (about 110°F/43°C). If using a pizza stone, place it in the oven and preheat to 390°F (199°C) at least 30 minutes before baking.

Prepare your work surface with a light dusting of flour. Have a clean kitchen towel ready for covering the dough. If you plan to freeze the pizzas, line a baking sheet with parchment paper and set aside.

Ingredients at a glance (12)
  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1 tbsp granulated sugar
  • 1 1/2 tsp salt
  • 1/2 cup warm water (110°F/43°C)
  • 1/2 cup warm milk
  • 1/4 cup olive oil, plus more for greasing
  • 1/2 cup garlic tomato sauce
  • 2 cups shredded mozzarella cheese
  • 6 oz sliced Turkish sucuk beef sausage, cut into thin strips
  • 1 cup diced bell peppers (any color)
  • 1/2 cup sweet corn kernels (fresh or frozen, thawed)

Instructions

Make the Dough

  1. Make the Dough
In a large bowl, whisk together the flour, instant yeast, sugar, and salt. Add the warm water, warm milk, and olive oil. Stir with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 6 to 8 minutes, until smooth and elastic. The dough should be soft and slightly tacky but not sticky.
Look for The dough is ready when it has doubled in volume and springs back when gently pressed with a finger.
Tip If the dough feels too sticky, add a tablespoon of flour at a time. If it's too dry, add a teaspoon of warm water.
  2. Divide and Shape the Dough
Punch down the risen dough and turn it out onto a lightly floured surface. Divide the dough into 8 equal pieces (about 2.5 ounces each). Roll each piece into a smooth ball. Cover the balls with a damp towel and let them rest for 10 minutes. This relaxes the gluten and makes shaping easier.
Look for The dough balls are smooth and slightly puffy after resting.
Tip Keep the dough balls covered while working with one at a time to prevent them from drying out.

After kneading, the dough should be smooth, elastic, and slightly tacky. It should have nearly doubled in size after the rise, filling the bowl. When you press a finger into it, the indentation should remain, and the dough should feel airy. This is the foundation for the fluffy crust, so take your time to ensure it's properly risen. If it hasn't doubled, give it another 15 to 20 minutes.

Shape and Top

  1. Press the Crusts
Working with one dough ball at a time, place it on a lightly floured surface. Use the palm of your hand to gently press it into a 4-inch round. Then, using the bottom of a glass or a small bowl, press down in the center to create a rimmed edge, leaving a slightly thicker border. The center should be thin, about 1/4-inch thick, and the rim about 1/2-inch thick. Transfer the shaped crusts to a parchment-lined baking sheet.
Look for Each crust has a distinct rim and a thin center, ready for toppings.
Tip If the dough springs back, let it rest for another 5 minutes before pressing again.
  2. Add the Sauce and Toppings
Spoon about 1 tablespoon of garlic tomato sauce onto each crust and spread it evenly over the center, leaving the rim clean. Sprinkle with shredded mozzarella, then arrange the sliced sucuk sausage, diced bell peppers, and sweet corn on top. Use as much or as little as you like, but avoid overloading the center.
Look for The toppings are evenly distributed, and the rims are still visible.
Tip Pat the corn dry with a paper towel before adding to prevent excess moisture on the pizza.
  3. Preheat the Oven
Preheat your oven to 390°F (199°C) while you finish assembling the pizzas. If you have a pizza stone, place it in the oven to heat as well. Otherwise, use a heavy baking sheet.
Look for The oven reaches the target temperature with the stone or sheet inside.
Tip A hot baking surface helps the bottoms crisp up nicely.

The dough balls should be smooth and easy to press into rounds. The rims should be distinct and the centers thin. As you add the sauce and toppings, the colors should be vibrant — red sauce, white and yellow cheese, deep red sausage, green and red peppers, and golden corn. The pizzas should look inviting even before baking. Ensure the rims are clean, as this helps them puff up during baking.

Bake and Serve

  1. Bake the Mini Pizzas
Place the baking sheet with the assembled pizzas into the preheated oven. Bake for 15 minutes, or until the crusts are puffed and golden brown, the cheese is melted and bubbling with brown spots, and the sucuk is sizzling. The edges should be crisp to the touch.
Look for The cheese is bubbly and browned in spots, and the crusts are deeply golden.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Rotate the baking sheet halfway through if your oven bakes unevenly.
  2. Cool and Serve
Remove the baking sheet from the oven and let the mini pizzas cool on the sheet for 2 to 3 minutes. This allows the cheese to set slightly and makes them easier to handle. Serve warm, with extra garlic tomato sauce for dipping if desired.
Look for The pizzas are slightly cooled, and the cheese is set but still gooey.
Tip Use a spatula to lift the pizzas off the sheet to avoid breaking the crust.

The pizzas should emerge from the oven with a golden, blistered crust, bubbling cheese with brown spots, and sizzling sausage. The aroma of garlic and melted cheese will be irresistible.

The edges should be crisp, and the centers should be hot and gooey. Let them rest briefly, then serve warm. The contrast of textures — crunchy crust, soft interior, and melty toppings — is the sign of a perfect mini pizza.

Common mistakes

One common mistake is overloading the pizzas with toppings, which can make the center soggy. Keep the toppings in a single layer, leaving a slight border for the rim. Another is not preheating the oven fully — a hot oven is essential for a crisp crust.

Also, avoid overworking the dough, which can make it tough. If the dough resists shaping, let it rest for a few minutes. Finally, don’t skip the resting time after dividing the dough; it makes the crusts much easier to press.

How to tell it’s done

The mini pizzas are done when the crusts are puffed and golden brown, and the cheese is melted and bubbling with brown spots. The edges should be crisp to the touch, and the sucuk should be sizzling.

To be safe, use an instant-read thermometer to check the internal temperature of the sausage; it should read at least 160°F (71°C). Let the pizzas rest for a couple of minutes before serving to allow the cheese to set slightly.

  • Ground meat: 160°F (71°C) in the thickest part
