Before you start

Before starting, open the packages of Lil' Smokies and drain any liquid. Mince the garlic cloves and measure the honey, Sriracha, soy sauce, and crushed red pepper flakes. Have a wooden spoon and a 6-quart slow cooker ready.

No need to preheat the slow cooker; the ingredients will come to temperature together. If you plan to serve directly from the slow cooker, ensure it has a WARM setting. Slice the scallions just before serving to keep them fresh and vibrant.

Ingredients at a glance (7)
  • 2 packages beef Lil' Smokies (about 14 oz each)
  • 3/4 cup raw honey
  • 1/2 cup Sriracha chili sauce
  • 6 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp crushed red pepper flakes
  • sliced scallions, for serving

Instructions

Phase 1: Combine and Start Cooking

  1. Combine the glaze ingredients
Place the Lil' Smokies into the slow cooker insert. Add the honey, Sriracha, minced garlic, soy sauce, and crushed red pepper flakes. Stir gently with a wooden spoon to coat every sausage evenly with the glossy mixture. Let it rest for 3 minutes before slicing.
Look for The sausages are evenly coated in a reddish-brown glaze with visible garlic bits.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Use a spatula to scrape every bit of honey and Sriracha from the measuring cups.
  2. Cover and set the slow cooker
Cover the slow cooker with its lid. Set the heat to HIGH and cook for 2 hours. Do not lift the lid during the first hour so the heat builds up steadily and the glaze begins to bubble.
Look for After about 30 minutes, the glaze starts to simmer around the edges.
Tip If your slow cooker runs hot, check at 1 1/2 hours to avoid scorching.

At the end of this phase, the sausages are coated with a glossy, raw-looking glaze. The honey and Sriracha are still separate, but the mixture is evenly distributed. The slow cooker is covered and set to HIGH. You may see the edges beginning to bubble after about 30 minutes. The kitchen starts to smell sweet and spicy, but the glaze is not yet thickened.

Phase 2: Thicken and Glaze

  1. Stir the glaze
After the first hour, stir the sausages gently to redistribute the glaze. Continue cooking uncovered for the remaining hour, stirring every 20 minutes, until the sauce thickens into a sticky, fiery red-amber glaze that clings to each sausage.
Look for The glaze is bubbling and starting to cling; the sausages look lacquered.
Tip Stirring helps the honey caramelize evenly without burning on the sides.
  2. Check the glaze consistency
The glaze should be thick enough to coat the back of a spoon. If it still looks thin, continue cooking on HIGH for another 15 to 30 minutes, stirring occasionally, until it reaches the desired sticky consistency.
Look for A spoon drawn through the glaze leaves a trail that slowly fills in.
Tip The glaze will thicken more as it cools, so avoid over-reducing.

After the second hour, the glaze has reduced significantly. It bubbles gently and coats the sausages with a sticky, lacquered layer. The color is a deep red-amber, and the sauce clings to the sausages when stirred.

The aroma is intensely sweet and spicy. The glaze should be thick enough to leave a trail on a spoon. Stirring every 20 minutes ensures even coating and prevents sticking.

Phase 3: Finish and Serve

  1. Finish with scallions
Sprinkle the sliced scallions over the top of the glazed sausages. Stir once gently to incorporate some of the scallions into the glaze while leaving others visible on top for color.
Look for Bright green scallions contrast with the glossy red glaze.
Tip Add the scallions just before serving to keep them crisp and vibrant.
  2. Serve warm from the crockpot
Serve the firecracker smokies directly from the slow cooker set to WARM. Provide toothpicks or small skewers for spearing the sausages. The glaze will stay glossy and warm for hours.
Look for The sausages are glistening and the aroma is sweet and spicy.
Tip Keep the slow cooker on WARM during serving to maintain the perfect texture.

The firecracker smokies are finished. The scallions add a fresh green contrast to the glossy red sausages. The glaze is sticky and clings to each sausage. The slow cooker is set to WARM for serving. The texture is tender, the glaze is glossy, and the heat is balanced by sweetness. The dish is ready to serve immediately with toothpicks.

Common mistakes

One common mistake is lifting the lid too often during the first hour, which lets out heat and extends cooking time. Another is not stirring enough during the final hour, which can cause the honey to scorch on the sides of the slow cooker.

Using a slow cooker that's too small can lead to overcrowding and uneven coating. Also, adding the scallions too early makes them wilt; add them just before serving. Finally, don't overcook on HIGH beyond 2 1/2 hours, as the glaze can become overly thick and sticky.

How to tell it’s done

The firecracker smokies are done when the glaze has thickened to a sticky, syrupy consistency that coats the sausages generously. The sauce should cling to the sausages rather than pooling around them.

The color will be a deep red-amber, and the aroma will be sweet and spicy. Since the sausages are fully cooked, the main indicator is the glaze texture. If the glaze is still thin, continue cooking on HIGH for another 15 to 30 minutes, stirring occasionally.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
