Before you start

Before beginning, ensure your workspace is organized and all ingredients are at hand. Preheat your oven to 400°F (200°C) well in advance to ensure it reaches the target temperature.

Line your baking sheet with parchment paper or aluminum foil for easier cleanup, and make sure the wire rack is clean and dry. Pat the raw chicken strips dry with paper towels to ensure the ranch adheres properly to the surface, as excess moisture can cause the coating to slide off during the baking phase.

Ingredients at a glance (3)
  • 3 cups Flamin' Hot Crunchy Cheetos
  • 1.5 lb chicken strips
  • 1 cup buttermilk ranch

Instructions

Pulverizing the Coating

  1. Prepare the Coating
Place the Flamin' Hot Crunchy Cheetos into a food processor and pulse until they are reduced to a fine, crimson dust. Transfer the crumbs to a wide, shallow bowl for easy dredging.
Look for The mixture should look like coarse red sand.
Tip Do not over-process into a powder, as you want some texture for the crunch.

The chips should be processed into a consistent, fine red dust without any large, chunky pieces remaining. Check that the texture is uniform, as this ensures the chicken will be coated evenly and will crisp up nicely during the baking process. If the crumbs are too coarse, they may burn before the chicken is cooked through.

Dredging the Chicken

  1. Dip and Coat
Dip each chicken strip into the buttermilk ranch, ensuring it is fully coated and dripping slightly. Roll the chicken in the Cheetos dust until every side is heavily encrusted with the spicy red crumbs.
Look for The chicken should be completely opaque and covered in the red coating.
Tip Press the crumbs firmly onto the chicken to help them stick during the baking process.

Each chicken strip must be thoroughly coated in the buttermilk ranch before being pressed into the crumb mixture. The chicken should be completely obscured by the red dust. Ensure the coating is applied firmly to the entire surface of each piece, including the sides, to prevent any exposed areas that could dry out.

Baking to Perfection

  1. Bake the Chicken
Arrange the coated chicken strips on a wire rack set over a baking sheet. Bake at 400°F (200°C) for 15 minutes until the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for 5 minutes before serving.
Look for The crust should be sizzling and set, and the chicken should feel firm to the touch.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Baking on a wire rack allows hot air to circulate underneath, ensuring the bottom remains crispy.

The chicken is ready when the crust is vibrant, sizzling, and firm to the touch. The internal temperature must reach 165°F (74°C).

The wire rack should be free of excess drippings, and the chicken should appear golden-red and crispy. Verify the temperature with a thermometer to ensure food safety before removing from the oven.

Common mistakes

A common mistake is overcrowding the baking rack, which prevents proper airflow and leads to uneven cooking. Ensure each strip has at least an inch of space around it.

Another error is failing to press the coating onto the chicken; if the crumbs are just loosely sprinkled, they may fall off during the transfer to the oven. Finally, do not skip the resting phase, as cutting into the chicken immediately will cause the juices to escape, resulting in a less flavorful bite.

How to tell it’s done

The chicken is done when the internal temperature reaches 165°F (74°C) as measured by an instant-read thermometer inserted into the thickest part of the strip. The exterior should be firm, sizzling, and vibrant in color.

Avoid overcooking, as the small strips can dry out quickly. Always allow the chicken to rest for at least 5 minutes before serving to ensure the juices redistribute throughout the meat, providing the most tender result.
