Tips for success

For the cleanest cuts, use a large chef's knife and wipe it with a damp paper towel between each slice. This prevents the ganache from dragging and keeps the edges sharp.

If the brownies are too soft to cut cleanly, chill them in the refrigerator for 30 minutes before slicing. You can also line the pan with foil instead of parchment for a sturdier lift.

To achieve a perfectly glossy ganache, make sure the cream is hot but not boiling, and let it sit over the chocolate for a couple of minutes before stirring.

Stir gently in one direction to avoid incorporating air bubbles. If the ganache seizes or becomes grainy, a splash of warm cream and a vigorous whisk can often bring it back to a smooth consistency.

Variations

  • Mocha Nut Brownies: Fold 1/2 cup toasted chopped walnuts or pecans into the batter before baking. The nuts add crunch and a nutty flavor that complements the coffee and chocolate.
  • Salted Caramel Swirl: After pouring the batter into the pan, dollop 1/2 cup salted caramel sauce over the top and swirl with a knife. The caramel adds a sweet and salty contrast to the dark chocolate.
  • Mint Chocolate: Add 1/2 teaspoon peppermint extract to the ganache along with the espresso powder. Top with crushed peppermint candies for a festive twist.
  • Orange Espresso: Add 1 tablespoon orange zest to the brownie batter and substitute Grand Marnier for the coffee liqueur. The orange and coffee flavors are a classic pairing.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 1 week. Let come to room temperature before serving for best flavor and texture.
Freezer
Wrap individual brownies in plastic wrap and place in a freezer-safe bag. Freeze for up to 2 months. Thaw overnight in the refrigerator.
Reheat
To reheat, place a brownie on a microwave-safe plate and heat for 10-15 seconds, or until just warm. Do not overheat, as the ganache may melt.

Store the brownies in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week; bring to room temperature before serving.

The ganache may soften slightly at room temperature, but that is part of its charm. Keep the brownies away from direct sunlight and heat to preserve the glossy finish.

These brownies can be made up to 2 days ahead and stored in an airtight container. The flavors actually deepen and meld overnight.

If making ahead, wait to add the cocoa powder and gold flakes until just before serving to keep the top pristine. The brownies can also be frozen for up to 2 months; thaw in the refrigerator overnight.

Serving ideas

Serve these brownies at room temperature or slightly warm. A scoop of vanilla ice cream or a dollop of whipped cream balances the intense chocolate and coffee flavors. For a special occasion, drizzle with a little extra coffee liqueur or a sprinkle of flaky sea salt. Pair with a strong espresso or a glass of cold milk.

These brownies are rich, so cut them into small squares. A 2-inch square is satisfying, but you can go smaller for a bite-size treat. Arrange them on a platter with fresh berries or mint leaves for a pop of color. They are perfect for dinner parties, holiday gatherings, or any time you want a luxurious chocolate dessert.

Frequently asked questions

Can this recipe be made without alcohol?
Yes. Substitute the coffee liqueur with strong brewed coffee mixed with 1 teaspoon of sugar. The espresso flavor will still come through, and the brownies will be moist and delicious. For the brush, use the same coffee mixture.
Why are the brownies dry or cakey?
Overbaking is the most common cause. The brownies should be removed from the oven when a toothpick inserted in the center comes out with a few moist crumbs, not clean. Also, be careful not to overmix the batter once the flour is added; overmixing develops gluten and makes the texture tough.
Can the ganache be made ahead of time?
Yes, the ganache can be prepared up to 2 days in advance and stored in the refrigerator. To use, gently reheat it in a saucepan over low heat or in the microwave in short bursts, stirring until smooth. Let it cool slightly before pouring over the brownies.
How should the brownies be stored to keep them fresh?
Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week. Bring to room temperature before serving. The brownies can also be frozen for up to 2 months.
Can the brownies be made in a different pan size?
A 9x9-inch pan will work, but the brownies will be thinner and may bake faster. Start checking at 18 minutes. A 9x13-inch pan will produce very thin brownies, so it is not recommended. Always line the pan with parchment for easy removal.

Espresso Kahlua Ganache Brownies

A warm, decadent espresso Kahlua brownie with a glossy dark chocolate ganache topping.

Ingredients

  • 2 tbsp instant espresso powder
  • 3 tbsp coffee liqueur (such as Kahlua)
  • 8 oz 70% dark chocolate, chopped
  • 1/2 cup unsalted butter, cut into pieces
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • 6 oz 70% dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tbsp instant espresso powder
  • 2 tbsp coffee liqueur (such as Kahlua)
  • 1 tbsp unsweetened cocoa powder, for dusting
  • Edible gold flakes, for garnish (optional)

Instructions

  1. Heat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides. In a small bowl, dissolve the 2 tablespoons instant espresso powder in the 3 tablespoons coffee liqueur, stirring until smooth. Set aside. In a medium saucepan, melt the 8 oz chopped dark chocolate and the butter together over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.
  2. Whisk the granulated sugar into the melted chocolate mixture until well combined. Add the eggs one at a time, whisking vigorously after each addition until the batter is glossy and smooth. Stir in the vanilla extract and the espresso-liqueur mixture, mixing until fully incorporated.
  3. Sprinkle the all-purpose flour and salt over the batter. Fold with a rubber spatula until just combined and no streaks of flour remain. Be careful not to overmix, as that can make the brownies tough.
  4. Pour the batter into the prepared pan and spread it into an even layer. Bake at 350°F (175°C) for 22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. The edges will be set and the center will look slightly underdone.
  5. As soon as the brownies come out of the oven, brush the top with the 2 tablespoons coffee liqueur. The warm brownies will absorb the liqueur, adding extra coffee flavor and moisture. Let the brownies cool completely in the pan on a wire rack.
  6. Place the 6 oz chopped dark chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream and 1 tablespoon instant espresso powder over medium heat until steaming and just beginning to simmer. Pour the hot cream over the chocolate and let it sit for 2 minutes, then stir gently until smooth and glossy.
  7. Pour the warm ganache over the cooled brownies. Use an offset spatula to spread it evenly to the edges, creating a smooth, glossy mirror coat. Let the ganache set at room temperature for about 1 hour, or until firm to the touch.
  8. Just before serving, dust the top with unsweetened cocoa powder and sprinkle with edible gold flakes if using. Cut into squares with a sharp knife, wiping the blade between cuts for clean edges.
