Before you start

Before beginning, ensure all ingredients are at room temperature to facilitate proper emulsification and whipping. Prepare your workspace by organizing your bowls, mixer, and ring molds.

It is vital to have the griddle preheated to the correct temperature before you start folding the meringue, as the batter should be cooked immediately once the meringue is incorporated to maintain the maximum amount of trapped air.

Have your grease ready for the molds and ensure you have a lid that fits your pan, as the steaming process is non-negotiable for achieving the correct height.

Ingredients at a glance (7)
  • 12 grams ceremonial-grade Uji matcha powder
  • 2 egg yolks
  • 30 grams all-purpose flour
  • 3 egg whites
  • 30 grams granulated sugar
  • 40 grams sweet azuki red beans
  • 1/4 cup heavy whipping cream, whipped

Instructions

Matcha Batter Preparation

  1. Prepare the Matcha Base
In a medium bowl, whisk together the ceremonial-grade Uji matcha powder, egg yolks, and all-purpose flour until the mixture is smooth and vibrant green. Ensure there are no lumps of flour remaining in the batter to maintain the desired delicate texture.
Look for Batter is smooth and uniform in color
Tip Sift the matcha powder before mixing to ensure a clump-free batter.

The batter should be a smooth, thick, and consistent emerald green paste. Check that all flour is fully hydrated and no dry pockets remain. The texture should be somewhat heavy but uniform, serving as a stable foundation for the lighter meringue that follows.

Meringue Incorporation

  1. Whip and Fold the Meringue
Using an electric mixer, whip the egg whites while gradually adding the granulated sugar until stiff, glossy peaks form. Gently fold the meringue into the matcha and egg yolk batter in two additions. Be careful not to deflate the mixture, as this air is crucial for the rise.
Look for Stiff peaks hold their shape on the whisk
Tip Fold with a wide spatula using a circular motion from the bottom up.

The final mixture should be light, airy, and uniform in color. The meringue must be fully integrated without streaks, yet the batter should still look voluminous and foamy. If the mixture appears thin or watery, the air has been lost, which will affect the final rise.

Precision Steaming

  1. Steam-Cook the Pancakes
Heat a greased griddle to 302°F (150°C). Place greased ring molds on the surface and fill them with the batter. Cover the pan and steam-cook for 5 minutes per side. Cook until the center reaches 160°F (71°C) to ensure the eggs are fully set. Top with sweet azuki beans and whipped cream.
Look for Pancakes reach 6 centimeters in height and are firm to the touch
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Keep the lid on throughout the steaming process to trap the moisture.

The pancakes should be tall, standing at about 6 centimeters, with a stable structure. The exterior should be lightly browned and the interior should be set and springy. The steam should have created a moist, tender crumb that is soft and cloud-like to the touch.

Common mistakes

A common mistake is over-mixing the batter after adding the meringue. This releases the air bubbles you worked so hard to incorporate, resulting in dense, flat pancakes rather than fluffy soufflés.

Another error is failing to maintain a consistent temperature; if the griddle cools down during the cooking process, the pancakes will deflate. Finally, do not rush the cooking time. If the heat is too high, the exterior will brown before the center is set, leaving you with a pancake that looks finished but is actually undercooked inside.

How to tell it’s done

The pancakes are done when they have reached a height of approximately 6 centimeters and feel firm yet springy to the touch. When checking for doneness, ensure the internal temperature has reached 160°F (71°C) to guarantee the eggs are safely cooked through.

The surface should be a light golden brown, and the interior should appear as a vibrant, emerald-colored cloud. If the pancakes seem wobbly but collapse easily when touched, they may need an additional minute of steaming to fully set the structure.
