Before you start

Before beginning, ensure that all fresh berries are thoroughly washed and dried to prevent excess moisture from compromising the texture of the cake. Prepare the vanilla pudding according to the package instructions and allow it to cool completely in the refrigerator.

Gather all necessary equipment, including a glass dish, an electric mixer, and a spatula, ensuring they are clean and dry. Having all components ready at room temperature or chilled as required will make the assembly process efficient and smooth.

Ingredients at a glance (6)
  • 2 cups heavy cream
  • 1 package vanilla pudding mix, prepared
  • 1 box graham crackers
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1/4 cup white chocolate, melted

Instructions

Preparing the Filling

  1. Prepare the Creamy Filling
In a large mixing bowl, whip the heavy cream until stiff peaks form. Gently fold in the prepared vanilla pudding until the mixture is smooth and fully combined.
Look for The mixture should be light, fluffy, and hold its shape perfectly.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Ensure the pudding is completely cooled before folding it into the whipped cream to maintain volume.

The mixture should be thick, smooth, and hold stiff peaks. It should look aerated and light, with a uniform color. Ensure there are no streaks of pudding remaining before moving to the assembly phase.

Assembling the Layers

  1. Assemble the Layers
Spread a thin layer of the cream mixture on the bottom of a 9x13 glass dish. Arrange a layer of graham crackers over the cream, followed by a layer of sliced strawberries. Repeat the process of layering cream, crackers, and fruit until the dish is filled.
Look for Create even layers that fill the corners of the dish.
Tip Use broken graham crackers to fill any small gaps between whole crackers.

The layers should look neat and uniform, with each layer of crackers completely covered by the cream. The fruit should be distributed evenly across the surface to ensure each slice has a consistent ratio of ingredients.

Chilling and Finishing

  1. Garnish and Chill
Top the final layer with fresh blueberries. Drizzle the melted white chocolate in ribbons across the top of the cake. Cover the dish and refrigerate for at least four hours to allow the crackers to soften into a cake-like consistency.
Look for The white chocolate should be warm enough to drizzle easily.
Tip For the cleanest slices, refrigerate the cake overnight before serving.

The cake should look firm and the white chocolate drizzle should be set on top of the blueberries. The entire dish should feel cool to the touch and the layers should appear distinct and well-defined.

Common mistakes

A common mistake is using warm pudding, which will deflate the whipped cream and result in a liquid filling that fails to set.

Another error is rushing the chilling process; the crackers require adequate time to absorb moisture from the cream to achieve the desired cake-like texture.

Furthermore, avoid over-mixing the cream and pudding, as this can cause the mixture to lose its airy, light consistency, leading to a dense and heavy dessert.

How to tell it’s done

The dessert is considered done when the layers have set sufficiently in the refrigerator, typically requiring at least four hours. The filling should be firm enough to hold its shape when a piece is removed, and the graham crackers should be soft throughout.

Since this recipe contains pudding, which relies on eggs for thickening, ensure the pudding base reaches an internal temperature of 160°F (71°C) during its initial preparation to ensure food safety.

  • Egg dishes: 160°F (71°C) in the thickest part

Coming up in Part 3: common questions

  • Can this dessert be made without using pudding?
