Tips for success
For the best texture, cut the beef and potatoes into uniform 1-inch cubes. This ensures they cook at the same rate. If you prefer a thicker gravy, mash a few potato cubes against the side of the slow cooker and stir them in before serving.
You can also add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) and cook for 15 minutes.
To brighten the flavor, a sprinkle of fresh parsley or chives before serving adds color and freshness, though the video doesn't include them.
If you like a bit of heat, a pinch of red pepper flakes in the sauce is a nice touch. Remember, the gravy mix is salty, so taste before adding more salt.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden and add them with the green beans. They will absorb the gravy and add an earthy depth that complements the beef.
- Use Chicken: Swap the beef for boneless, skinless chicken thighs, cut into chunks. Cook on low for 6 hours, and ensure the chicken reaches 165°F (74°C). The gravy will be lighter but still delicious.
- Make It Spicy: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño to the sour cream layer. The heat mellows during cooking, leaving a warm kick that pairs well with the tangy sauce.
- Vegetarian Version: Replace the beef with 2 cups of hearty mushrooms or a can of drained chickpeas. Use vegetarian brown gravy mix and vegetable broth if needed. Cook on low for 4 hours, as vegetables need less time.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until bubbling. Add a little beef broth or water to loosen the gravy if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors deepen overnight.
Reheat gently in the microwave or on the stovetop, adding a splash of beef broth or water if the gravy has thickened too much. The green beans may soften further, but the dish remains delicious.
Assemble the slow cooker up to 24 hours in advance: layer the beef, beans, potatoes, sour cream, and gravy mix in the insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 8 hours. You may need to add 30 minutes of cooking time because the ingredients start cold.
Serving ideas
Serve this slow-cooker beef over buttered egg noodles as shown, letting the gravy soak into every twirl. A side of crusty bread or a simple green salad rounds out the meal. The dish is hearty enough to stand alone, but the noodles make it a complete dinner that satisfies big appetites.
For a lower-carb option, spoon the beef and vegetables over cauliflower rice or mashed potatoes. The gravy also works well over rice or polenta. Garnish with fresh herbs if you like, though the dish is delicious plain. This recipe makes great leftovers for lunch the next day.

Easy Sour Cream Green Bean Beef Bites

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 lb fresh green beans, trimmed
- 1 1/2 lb russet potatoes, peeled and cubed
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- 12 oz egg noodles, cooked and buttered
Instructions
- Place the cubed beef chuck into the bottom of a 6-quart slow cooker. Scatter the trimmed green beans over the beef, then add the cubed russet potatoes in an even layer. Do not stir.
- Dollop the sour cream over the top of the vegetables, then sprinkle the brown gravy mix evenly over everything. Do not stir.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4 to 5 hours, until the beef is fork-tender and the potatoes are soft. The sauce will darken and become bubbly. Let it rest for 3 minutes before slicing.
- Insert an instant-read thermometer into a cube of beef. It should read at least 145°F (63°C). If not, continue cooking and check again after 30 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute.
- While the beef rests, cook the egg noodles according to package directions in salted water. Drain and toss with butter.
- Spoon the beef, green beans, potatoes, and gravy over the buttered noodles on a plate or into a bowl. Serve hot.
