Before you start

Before you begin, ensure your oven is preheated to 375°F (190°C) to guarantee even cooking. Take the burritos out of their packaging and have your enchilada sauce and shredded cheese ready to go.

Having all your components prepared on the counter will allow you to assemble the dish quickly and efficiently. Check that your baking dish is clean and dry, as this will help prevent any sticking during the baking process and make clean-up much easier once the meal is finished.

Ingredients at a glance (3)
  • 6 ground beef and bean burritos (store-bought or made ahead)
  • 15 oz red enchilada sauce
  • 2 cups shredded cheddar cheese

Instructions

Assembly of the burritos

  1. Prepare the baking dish
Preheat the oven to 375°F (190°C). Arrange the ground beef and bean burritos in a single layer, seam side down, inside a 9x13 inch rectangular ceramic baking dish. Ensure they are packed snugly to keep their shape during the baking process.
Look for The burritos should be arranged in a tight, uniform row.
Tip Place them seam side down to prevent the burritos from unrolling while they heat through.

The burritos should be arranged in a single, even layer at the bottom of the dish. They should be positioned seam side down to ensure they remain intact. Ensure there is no excess space in the pan, as a snug fit helps the burritos maintain their shape while they bake and absorb the sauce effectively.

Adding sauce and cheese

  1. Add sauce and cheese
Pour the red enchilada sauce evenly over the arranged burritos, ensuring every part of the tortilla surface is lightly covered. Sprinkle the shredded cheddar cheese thickly across the top of the dish to create a complete layer of cheese.
Look for The sauce should coat the burritos, and the cheese should completely cover the surface.
Tip Use a glass pitcher to pour the sauce steadily for even coverage across the entire baking dish.

The enchilada sauce should completely coat the tops of the burritos. When adding the cheese, spread it evenly from edge to edge to ensure that every portion receives a generous, uniform topping.

The dish should look colorful and well-covered before it enters the hot oven, which will facilitate even melting and browning.

Baking to perfection

  1. Bake and serve
Place the dish in the preheated oven and bake until the sauce is bubbling and the cheese is fully melted and golden, approximately 20 to 25 minutes. Ensure the internal temperature of the ground meat filling reaches 160°F (71°C). Remove from the oven and let rest for 5 minutes before serving.
Look for The cheese should be bubbling and the sauce thickened around the edges.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Allowing the dish to rest for 5 minutes helps the sauce settle and makes serving much easier.

The final stage is complete when the cheese is bubbling and the sauce has thickened. You should see a consistent golden color across the top. The internal temperature must reach 160°F (71°C). Once removed, the dish should sit for 5 minutes, allowing the sauce to thicken slightly for easier serving.

Common mistakes

A common mistake is overcrowding the baking dish, which can prevent the sauce from circulating properly and result in soggy spots. Always use a dish that fits the burritos snugly but not excessively tight.

Another error is failing to let the dish rest after baking; skipping this step can make it difficult to serve the burritos cleanly, as the hot sauce may be too thin and runny immediately upon removal from the oven.

How to tell it’s done

The burrito bake is ready when the enchilada sauce is bubbling vigorously around the edges of the dish and the cheddar cheese has melted into a uniform, golden-brown layer.

Use a digital thermometer to confirm that the center of the burritos reaches a safe internal temperature of 160°F (71°C) for the ground meat. The burritos should feel firm to the touch when gently pressed with a spatula, indicating the filling is fully heated.

  • Ground meat: 160°F (71°C) in the thickest part
