Tips for success

To achieve a more intense flavor, you can sauté the garlic in a small pan with a drop of olive oil for one minute before adding it to the squash. This mellows the sharp bite of the raw garlic and allows the natural oils to release, providing a deeper savory base for the tomato sauce. If you prefer a hint of heat, a pinch of red pepper flakes can be added along with the herbs to provide a subtle warmth that contrasts beautifully with the sweetness of the squash.

Serving this dish is best done by using a fork to gently pull the squash flesh away from the rind directly in the slow cooker, mixing it with the sauce and melted cheese. This creates a rustic, well-combined dish that is easy to portion out.

If you prefer a cleaner presentation, you can carefully remove the squash halves from the slow cooker to individual plates and shred the strands inside the rind, spooning the sauce and cheese over the top before serving to your guests.

Variations

  • Spicy Tomato Squash: Add one teaspoon of crushed red pepper flakes to the tomato sauce before cooking to introduce a pleasant heat that complements the sweet strands of the spaghetti squash.
  • Garden Vegetable Squash: Stir in a half-cup of diced zucchini or bell peppers during the last hour of cooking to add fresh texture and a variety of garden flavors to the dish.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Not recommended, as the squash texture becomes overly soft and watery after thawing.
Reheat
Reheat in the microwave for 1-2 minutes or in a saucepan over medium heat until steaming hot.

Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Properly stored, the spaghetti squash will keep in the refrigerator for up to three days. When reheating, ensure the squash is heated throughout until steaming to maintain the best quality. If you notice any signs of spoilage, such as an off smell or change in texture, it is best to discard the leftovers to ensure food safety.

You can prepare the squash by cutting and seeding it up to one day in advance, storing the prepared halves in an airtight container or a large plastic bag in the refrigerator. This reduces the active prep time on the day you plan to cook the dish.

However, it is recommended to add the garlic, herbs, and sauce just before you are ready to start the slow cooker to ensure the flavors remain fresh and the sauce does not make the squash flesh mushy before cooking begins.

Serving ideas

This dish serves beautifully as a standalone main course, especially when paired with a side of crusty bread or a fresh, crisp green salad.

The simplicity of the tomato and basil flavor profile makes it an excellent base for adding other ingredients if desired, such as sautéed mushrooms or spinach, which can be stirred in right before serving to add texture. The warm, comforting nature of the meal makes it a perfect choice for cooler evenings when you want something hearty.

For a more substantial meal, consider serving the spaghetti squash alongside grilled chicken or Italian sausage. The acidity of the tomato sauce balances the richness of the meat, while the squash provides a light and satisfying alternative to traditional pasta.

Regardless of how you choose to serve it, ensure the dish is presented while still warm so the cheese remains melted and the squash strands maintain their ideal texture. It is a versatile dish that easily adapts to the preferences of your family and guests.

Frequently asked questions

Can this dish be made ahead of time?
The squash can be prepped by cutting and seeding it in advance, but it is best to add the sauce and herbs immediately before cooking to ensure the best texture and flavor profile.
Why does the squash become watery after cooking?
Spaghetti squash has a high water content. To minimize excess liquid, ensure the squash is placed cut-side up and avoid overcooking, which can cause the vegetable to release too much moisture.
Is it possible to use a different type of squash?
This recipe is specifically designed for spaghetti squash because of its unique strand-like texture. Other varieties like butternut or acorn squash have a different density and will not produce the same results.
