Before you start

Before beginning, gather all ingredients and ensure the slow cooker insert is clean and dry. Chop the onion and green pepper into small, uniform pieces to ensure they cook evenly. Measure out your spices and have the sloppy joe sauce ready to pour.

If you prefer a faster cleanup, a slow cooker liner can be used, though it is not strictly necessary for this recipe. Ensure your workspace is clear and that you have a pair of forks ready for the final shredding phase once the cooking cycle is complete.

Ingredients at a glance (6)
  • 4 boneless skinless chicken breasts
  • 1 cup diced onion
  • 1 cup diced green pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 15 oz sloppy joe sauce

Instructions

Preparation and layering

  1. Prepare the slow cooker
Place the raw boneless skinless chicken breasts into the bottom of the slow cooker insert. Ensure they are arranged in an even layer to promote consistent cooking throughout the process.
Look for The chicken should be resting flat on the bottom of the slow cooker insert.
Tip If the chicken breasts are very large, slice them in half horizontally to ensure they cook through evenly.
  2. Add aromatics and spices
Scatter the diced onion and green pepper over the chicken breasts. Sprinkle the chili powder and garlic powder evenly over the top of the vegetables and chicken to ensure the flavors are distributed.
Look for Vegetables and spices should be spread across the surface of the raw chicken.
Tip Use a small ramekin to mix your spices together before sprinkling for even coverage.

The chicken breasts should be arranged in a single layer at the bottom of the slow cooker.

The onions, peppers, and spices should be distributed evenly over the top to ensure the flavors begin to penetrate the meat as the temperature rises. Everything should be ready for the addition of the sauce before the lid is secured.

Slow cooking process

  1. Add sauce and cook
Pour the sloppy joe sauce over the chicken and vegetables. Cover the slow cooker and cook on low heat for 4 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C).
Look for The sauce should coat all ingredients, and the chicken should be tender enough to shred easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the cooking process to keep the heat consistent.

The sauce should be poured evenly over the contents, and the lid must be placed securely. During this phase, the aroma will begin to develop. Check that the heat setting is on low; the chicken should be left undisturbed for the full cooking duration to ensure it reaches the safe internal temperature of 165°F (74°C).

Shredding and finishing

  1. Shred and serve
Once cooked, remove the chicken breasts from the slow cooker. Use two forks to shred the meat, then return it to the slow cooker and stir well to combine with the sauce and vegetables before serving.
Look for The chicken should be fully shredded and well-coated in the thickened red sauce.
Tip Shredding the chicken while it is still warm makes the process much easier.

The chicken should be tender enough to pull apart easily with two forks. The final mixture should have a thick, consistent texture where the shredded chicken is thoroughly coated in the sauce. If the sauce appears too thin, you can continue cooking with the lid off for a few minutes to allow some moisture to evaporate.

Common mistakes

Avoid overcooking the chicken, as even in a slow cooker, breast meat can become dry if left for too long after it hits the target temperature. Do not add too much liquid beyond the sauce, as the vegetables and chicken will release their own moisture during the cooking process.

Ensure the lid remains closed for the majority of the cooking time to maintain the necessary temperature and steam levels, which are critical for proper texture.

How to tell it’s done

The chicken is fully cooked when it reaches an internal temperature of 165°F (74°C). The meat should be opaque throughout and shred easily with minimal pressure from a fork.

If the chicken still feels firm or resists shredding, continue cooking for an additional 15 to 30 minutes. The sauce should be thickened and clinging to the shredded meat, with the vegetables appearing soft and fully incorporated into the mixture.

  • Poultry: 165°F (74°C) in the thickest part
