Before you start

Before you begin, ensure your slow cooker is clean and placed on a flat, heat-resistant surface away from any edges. Gather all your ingredients so they are ready to assemble quickly.

If your beef patties were stored in the refrigerator, take them out about 15 minutes before you start to take the chill off, but do not leave them at room temperature for longer than 30 minutes. Verify that you have a proper meat thermometer on hand to check for doneness once the cooking time is complete.

Ingredients at a glance (4)
  • 4 ground beef patties
  • 1 cup sliced mushrooms
  • 1 packet brown gravy mix
  • 1 cup beef broth

Instructions

Layering the ingredients

  1. Prepare the slow cooker base
Place the raw beef patties into the base of the slow cooker, arranging them in a single layer to ensure even cooking throughout the process.
Look for patties lying flat in base
Tip Ensure the patties are not overlapping so they cook uniformly.
  2. Add mushrooms and aromatics
Scatter the sliced mushrooms evenly over the top of the beef patties, ensuring they are distributed across the entire surface of the meat.
Look for mushrooms covering the beef patties
Tip Fresh mushrooms work best for texture, but canned mushrooms can be used if drained well.

At the end of this phase, the beef patties are neatly arranged in the base of the slow cooker, topped with an even layer of sliced mushrooms. The ingredients should look orderly, with enough space between the patties to allow the broth to circulate effectively, setting the foundation for a perfectly braised meal.

Seasoning and liquid addition

  1. Season with gravy mix
Sprinkle the packet of brown gravy mix evenly over the mushrooms and patties, making sure to cover all areas to build the flavor profile of the sauce.
Look for powder covering all the ingredients
Tip Use a spoon to lightly spread the powder if it clumps in one area.
  2. Add liquid
Pour the beef broth over the ingredients in the slow cooker, ensuring the liquid flows around the patties to create the base for the savory gravy.
Look for liquid pooling at bottom
Tip Pour slowly to avoid washing away the gravy mix from the tops of the patties.

After adding the gravy mix and beef broth, the slow cooker should look like a rich, seasoned stew base. The gravy mix should be mostly incorporated into the broth, and the mushrooms should be partially submerged, ensuring they will soften and release their umami flavor during the long, slow cook.

Slow cooking to completion

  1. Cook and serve
Cover and cook on low for 4 hours until the patties reach an internal temperature of 160°F (71°C). Let the patties rest for 5 minutes before serving with the thickened mushroom gravy.
Look for gravy thickened and steaming
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Check the temperature at the thickest part of the patty.

By the end of the cooking time, the kitchen should smell savory and rich. The beef patties will be tender and fully cooked, and the liquid will have transformed into a thick, glossy, and flavorful gravy that coats the back of a spoon, ready to be served hot.

Common mistakes

A common mistake is overcrowding the slow cooker or stacking the patties, which prevents even cooking and can result in some areas remaining undercooked while others become dry.

Another error is failing to use a thermometer to check for doneness, relying instead on visual cues alone, which is unreliable for ground meat.

Additionally, do not lift the lid during the cooking process unless necessary, as each time you open the lid, you lose valuable heat and moisture, significantly increasing the total cooking time required.

How to tell it’s done

The Salisbury steaks are done when they have reached a firm but tender texture and an internal temperature of 160°F (71°C). Use a meat thermometer inserted into the thickest part of a patty to confirm it is fully cooked.

The gravy should be glossy, thickened, and bubbling slightly around the edges of the slow cooker. Once the temperature is confirmed, turn off the slow cooker and allow the meat to rest for at least 5 minutes before serving to ensure the juices redistribute.

  • Ground meat: 160°F (71°C) in the thickest part
