Tips for success
For the most tender pot roast, cook on low rather than high. The low, slow heat breaks down connective tissue more effectively.
If you're short on time, you can cook on high for 5–6 hours, but the texture may be slightly less tender. Always let the meat rest before shredding to keep it juicy.
To thicken the gravy, remove the meat and vegetables, then whisk 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the hot liquid.
Cook on high for 10 minutes until it thickens. Alternatively, use a slotted spoon to remove the solids and simmer the liquid on the stovetop until reduced.
Variations
- Add Potatoes: Add 1 pound of baby potatoes or quartered Yukon Gold potatoes along with the carrots. They'll soak up the gravy and become tender and flavorful.
- Use Root Vegetables: Swap half the carrots for parsnips or turnips. Their earthy sweetness complements the soda and onion soup mix nicely.
- Make It Spicy: Add a minced chipotle pepper in adobo sauce or a pinch of cayenne pepper to the soda before pouring. This adds a smoky heat that pairs well with the sweet soda.
- Herb Infusion: Tuck a few sprigs of fresh thyme or rosemary around the roast before cooking. The herbs will perfume the meat and gravy without overpowering.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water if the gravy is too thick.
Store leftover pot roast in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight.
Reheat gently on the stovetop or in the microwave, adding a splash of water or beef broth if the gravy has thickened too much.
This recipe is perfect for meal prep. Assemble the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on low as directed. You can also cook the roast ahead, shred it, and store it in the gravy in the refrigerator for up to 4 days.
Serving ideas
Serve the pot roast with the gravy spooned generously over the beef and vegetables. It pairs beautifully with mashed potatoes, egg noodles, or crusty bread to soak up the sauce. A simple green salad with a tangy vinaigrette balances the richness.
For a complete meal, add steamed green beans or roasted broccoli on the side. The leftovers are excellent in sandwiches, on top of creamy polenta, or stirred into a hearty soup. The gravy is so good you'll want to use every last drop.

Crockpot Pepper Soda Pot Roast: Dump-and-Go Dinner

Ingredients
- 3 lb beef chuck roast
- 4 medium carrots, peeled and cut into chunks
- 1 large onion, cut into wedges
- 1 oz envelope dry onion soup mix
- 1 1/2 cups pepper soda (such as Dr Pepper)
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Scatter the carrot chunks and onion wedges around the roast. Sprinkle the dry onion soup mix evenly over the meat and vegetables.
- Pour the pepper soda over the roast and vegetables. Do not stir; the soda will bubble and mix with the soup mix as it cooks.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the beef is very tender and shreds easily with a fork. Let it rest for 3 minutes before slicing.
- When the roast is done, check that the internal temperature reaches at least 145°F (63°C) for food safety. Let the meat rest for at least 3 minutes before handling.
- Transfer the roast to a cutting board and shred into large chunks using two forks. Return the beef to the slow cooker with the vegetables and gravy, or serve immediately on a platter with the gravy spooned over.
