Before you start

Before starting, ensure you have washed and prepared the cabbage by shredding it into thin, uniform ribbons. The chicken breast should be sliced into consistent strips about one-quarter inch thick.

Have your measuring cups and spoons ready, and clear a space near your slow cooker to ensure you can add the ingredients quickly and efficiently. Check that your slow cooker is clean and plugged into a stable power source on a flat, heat-resistant countertop surface.

Ingredients at a glance (4)
  • 1 lb chicken breast, sliced into thin strips
  • 4 cups shredded cabbage
  • 1 tsp garlic powder
  • 1/2 cup hoisin sauce

Instructions

Layering the primary ingredients

  1. Prepare the base
Place the thinly sliced chicken breast strips into the bottom of the slow cooker in an even layer. Ensure the meat is spread out to promote even cooking throughout the process.
Look for Chicken is arranged in a single layer
Tip Slice the chicken into uniform strips to ensure they cook at the same rate.

The chicken and cabbage should be neatly arranged in the slow cooker. The chicken should form a stable base at the bottom, while the cabbage provides a layer on top that will eventually wilt down into the sauce. Everything should look organized and ready for the seasoning.

Seasoning and saucing

  1. Layer the vegetables and seasoning
Scatter the shredded cabbage evenly over the chicken pieces. Sprinkle the garlic powder over the top of the cabbage, ensuring it is distributed well across the surface.
Look for Cabbage covers the chicken completely
Tip Use a fresh head of cabbage and shred it yourself for the best texture.

The garlic powder and hoisin sauce are added to the top of the cabbage layer. The sauce should be poured in a circular motion to ensure it covers the cabbage evenly. At this stage, the slow cooker is ready to be covered and set to the appropriate heat level.

Cooking to perfection

  1. Add sauce and cook
Pour the hoisin sauce over the cabbage and seasonings. Cover the slow cooker and cook on low for 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C). Serve warm.
Look for Chicken is fully cooked through and glossy
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Stir the mixture gently before serving to combine the sauce with the cooked chicken and softened cabbage.

The dish is finished when the sauce is bubbling, the chicken is tender, and the cabbage has wilted significantly. The mixture should smell savory and slightly sweet. A quick check with a thermometer confirms the chicken has reached the required temperature.

Common mistakes

A common mistake is overcrowding the slow cooker with too much cabbage, which can lead to excessive moisture and a watery sauce.

Another frequent error is failing to slice the chicken into uniform pieces, resulting in some parts being overcooked while others remain underdone.

Ensure that the hoisin sauce is poured evenly over the cabbage so that it does not pool only in one area, which helps in achieving an even flavor distribution throughout the entire dish.

How to tell it’s done

The chicken is done when it is opaque throughout and reaches a safe internal temperature of 165°F (74°C). The cabbage should be tender and wilted, having absorbed the dark, glossy hoisin sauce.

Before serving, allow the dish to rest for five minutes to let the sauce thicken slightly and coat the ingredients more effectively. If the chicken seems too firm, continue cooking for another fifteen minutes before testing the temperature again.

  • Poultry: 165°F (74°C) in the thickest part
