Tips for success

For those who prefer a slightly thicker gravy, consider removing the shredded meat once it is finished and whisking in a small amount of cornstarch slurry to the remaining juices in the slow cooker. Turn the heat to high for 10 minutes until the sauce coats the back of a spoon. This extra step creates a more luxurious finish that clings beautifully to the shredded beef and mashed potatoes.

If you find the flavor too intense, you can adjust the amount of au jus mix or ranch seasoning used. However, keep in mind that the beef chuck is a large cut of meat that benefits from the full intensity of these seasonings.

If you have extra pepperoncini, you can add a few more for extra tang, but be mindful that they also add salt, so taste the gravy before adding any additional salt to the finished dish.

Variations

  • Spicy Mississippi Roast: Add one tablespoon of red pepper flakes or a few dashes of hot sauce during the layering step to increase the heat profile of the dish. This variation pairs well with the acidity of the pepperoncini.
  • Vegetable-Packed Roast: Add two cups of chopped carrots and one cup of celery chunks to the slow cooker along with the beef. These vegetables will absorb the savory juices and add a sweet, earthy contrast to the rich meat.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe bag or container for up to 2 months.
Reheat
Thaw in the refrigerator overnight and reheat in a saucepan over low heat until steaming hot throughout.

Store any leftover pot roast in an airtight container in the refrigerator for up to three days. Ensure the meat is completely cooled before covering, but do not leave it at room temperature for more than two hours.

The flavors often deepen overnight, making leftovers an excellent option for meals the following day. Keep the shredded meat submerged in some of its cooking juices to prevent it from drying out during storage.

This dish is perfect for making ahead as it reheats beautifully. You can prepare the entire recipe, shred the meat, and store it in the refrigerator. When ready to serve, gently reheat the meat and gravy in a saucepan over low heat or in the microwave until warmed through. The flavors will be just as good, if not better, after the ingredients have had more time to meld together in the refrigerator.

Serving ideas

The classic way to serve this Mississippi pot roast is over a generous portion of creamy mashed Yukon Gold potatoes, which act as the perfect canvas for the savory, tangy gravy.

The starch of the potatoes balances the intensity of the beef and pepperoncini perfectly. For a lighter approach, serve the shredded beef alongside roasted root vegetables or steamed green beans, allowing the gravy to act as a flavorful sauce for the entire plate.

Consider serving with a side of crusty bread to soak up the remaining juices, as the combination of melted butter, ranch, and au jus is too delicious to leave behind.

A simple side salad with a crisp vinaigrette also provides a nice contrast to the richness of the roast. For a more casual presentation, the shredded beef can be served on toasted slider buns with a slice of provolone cheese for a decadent sandwich.

Frequently asked questions

Can a different cut of meat be used?
While beef chuck is ideal for its fat content and connective tissue, a brisket or even a thick round roast can work. Keep in mind that leaner cuts may require slightly less time and could be less tender.
Is it necessary to add extra salt?
The ranch and au jus seasoning packets are typically high in sodium, so additional salt is rarely needed. Always taste the finished gravy before seasoning further to ensure the flavor profile remains balanced.
Why does the sauce look oily?
The oiliness comes from the rendering of the beef fat and the added butter. This is a natural part of the cooking process and contributes to the rich mouthfeel of the gravy. If desired, you can skim excess fat from the surface before serving.

Ingredients

  • 3 lb beef chuck roast
  • 1 packet dry ranch seasoning mix
  • 1 packet au jus gravy mix
  • 8 whole yellow pepperoncini peppers
  • 115 g unsalted butter

Instructions

  1. Place the beef chuck roast into the bottom of the slow cooker basin. Evenly sprinkle the dry ranch seasoning mix and the au jus gravy mix over the top of the meat. Place the whole yellow pepperoncini peppers around the roast and top with the unsalted butter.
  2. Secure the lid tightly onto the slow cooker. Set the device to cook on the LOW setting for 8 hours. Allow the roast to simmer undisturbed as the connective tissues break down, creating a tender, flavorful base in the juices. Ensure the beef reaches an internal temperature of 145°F (63°C) and let it rest for at least 3 minutes before shredding.
  3. Once the cooking time is complete and the beef reaches an internal temperature of at least 145°F (63°C), remove the lid. Using two forks, shred the tender beef directly inside the slow cooker, incorporating it into the butter and pepperoncini juices. Let the meat rest for 10 minutes before serving over mashed potatoes.
