Tips for success
To enhance the smoky depth of the dish, you can briefly sear the sliced smoked sausage in a skillet before adding it to the slow cooker. This extra step caramelizes the edges of the sausage, locking in the savory juices and creating a richer flavor profile.
If you prefer a spicier jambalaya, feel free to increase the amount of Cajun seasoning or add a few dashes of your favorite cayenne-based hot sauce directly into the broth before cooking.
Keep the slow cooker lid firmly closed during the main cooking phase. Every time the lid is lifted, a significant amount of steam and heat escapes, which can add up to fifteen minutes to the total cooking time and cause the rice to cook unevenly.
Trust the slow cooker to do its job, and only open the lid when it is time to stir in the raw shrimp at the very end.
Variations
- Spicy Andouille: Substitute the standard smoked sausage with spicy Louisiana andouille sausage and add a pinch of cayenne pepper for an authentic, fiery kick.
- Mild Herb: Use a mild smoked turkey sausage and reduce the Cajun seasoning, adding dried thyme and oregano for a herbal, family-friendly flavor profile.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the cooked rice can become mushy and the shrimp can turn rubbery when thawed.
- Reheat
- Reheat gently in a saucepan on the stovetop over low heat with a splash of broth to restore moisture, stirring occasionally until hot throughout.
Allow any leftover jambalaya to cool to room temperature for no more than two hours before transferring it to an airtight container. Store the container in the refrigerator for up to three days. Because the dish contains seafood, it is best enjoyed sooner rather than later to maintain the optimal texture and flavor of the shrimp.
You can prep the ingredients the night before by slicing the smoked sausage and dicing the vegetables. Store the chopped sausage and vegetables in separate airtight containers in the refrigerator.
In the morning, simply dump the prepared ingredients into the slow cooker insert, add the rice, spices, and broth, and set the timer. Keep the raw shrimp in the refrigerator until you are ready to cook them at the end.
Serving ideas
Serve the hot jambalaya directly from the slow cooker to keep it warm during a gathering. Spoon generous portions into deep bowls, ensuring each serving has a good balance of seasoned rice, savory sausage slices, and plump shrimp.
Accompany the meal with a side of warm, buttery cornbread or a crisp green salad to balance the rich, spicy flavors of the main dish.
Offer extra hot sauce, sliced jalapeños, or lemon wedges at the table so guests can customize their bowls to their liking. A squeeze of fresh lemon juice right before eating adds a bright, zesty acidity that cuts through the richness of the sausage and elevates the delicate flavor of the shrimp.

- 1 tbsp Cajun seasoning
- 3 cups chicken broth
- 1 1/2 cups long-grain white rice
- 1 lb raw shrimp, peeled and deveined
- 1/4 cup green onions, sliced for garnish
