Before you start
Before you start, gather all your ingredients: frozen turkey meatballs, pineapple chunks, ground ginger, pineapple juice, soy sauce, and brown sugar. No need to thaw the meatballs. If using canned pineapple, drain the chunks and reserve the juice for the sauce.
Set your slow cooker on the counter and have your measuring cups and a small bowl ready for mixing the sauce. This is a true dump-and-go recipe, so the only prep is measuring and pouring.
Ingredients at a glance (6)
- 1 1/2 lb frozen precooked turkey meatballs
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 tsp ground ginger
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup packed brown sugar
Instructions
Assemble
- Add the MeatballsPlace the frozen turkey meatballs in the bottom of the slow cooker in a single layer if possible, crowding them is fine. Scatter the pineapple chunks evenly over the meatballs.Look for Meatballs cover the bottom, pineapple chunks tucked between them.Tip No need to thaw the meatballs; they cook perfectly from frozen.
- Season with GingerDust the ground ginger over the meatballs and pineapple, trying to distribute it as evenly as possible.Look for A light golden-brown coating of ginger on the ingredients.Tip Stir gently after adding if you want the ginger more evenly mixed.
At the end of this phase, the slow cooker contains a layer of frozen meatballs with pineapple chunks scattered between them, dusted with ground ginger.
The sauce has been poured over everything, covering the meatballs and pooling in the gaps. The ingredients look bright and fresh, and the sauce is a deep brown. Before moving on, give the sauce a quick stir to ensure the sugar is dissolved.
Slow Cook
- Make the SauceIn a small bowl, whisk together the pineapple juice, soy sauce, and brown sugar until the sugar is dissolved.Look for Sauce is smooth, dark brown, and slightly syrupy.Tip Taste the sauce; add more brown sugar if you prefer a sweeter finish.
- Pour the SaucePour the sauce evenly over the meatballs and pineapple in the slow cooker. Do not stir; the sauce will bubble up during cooking.Look for Sauce covers the meatballs, pooling slightly around them.Tip Stirring now can break the meatballs; leave them undisturbed.
- Cook on LowCover the slow cooker and cook on low for 4 hours, or until the meatballs are heated through and the sauce has thickened slightly.Look for Aromas of pineapple and soy fill the kitchen; sauce is bubbly.Tip If your slow cooker runs hot, check at 3 hours.
After several hours on low, the kitchen smells sweet and savory. The sauce has darkened and thickened slightly, and the meatballs are tender. The pineapple chunks have softened and released some of their juice into the sauce. A gentle stir shows the sauce coating the meatballs. The meatballs should be heated through; if you have a thermometer, they should read at least 165°F (74°C).
Finish and Serve
- Thicken the SauceIf the sauce is too thin, remove the meatballs with a slotted spoon and keep warm. Whisk the sauce in the slow cooker, then simmer on high uncovered for 10–15 minutes until it coats the back of a spoon.Look for Sauce is glossy and thick enough to cling to a spoon.Tip Don't reduce too much; it will thicken further as it cools.
- Return Meatballs to SauceReturn the meatballs and pineapple to the slow cooker and stir gently to coat everything in the thickened sauce.Look for Meatballs are shiny and evenly coated.Tip Use a gentle hand to keep the meatballs intact.
- Serve WarmServe the huli huli meatballs hot, spooning extra sauce over the top. They're delicious over rice or on their own.Look for Steam rises from the glossy, dark sauce.Tip Garnish with sliced green onions if you like, though the video doesn't show them.
If you've reduced the sauce, it now clings to the back of a spoon. The meatballs are glossy and evenly coated, and the pineapple chunks are soft but still hold their shape. The sauce is thick enough to coat each bite. Serve hot, with extra sauce spooned over the top. The dish looks rich and inviting, with steam rising and a deep caramel color.
Common mistakes
One common mistake is stirring the meatballs too soon, which can break them apart. Let them cook undisturbed for most of the time. Another is using too much liquid, which makes the sauce thin; stick to the amounts in the recipe.
Don't skip the reduction step if you prefer a thicker sauce. Also, avoid overcooking, as the meatballs can become mushy if left in the slow cooker too long. Finally, taste the sauce before serving and adjust sweetness or salt if needed.
How to tell it’s done
The meatballs are done when they are heated through and have absorbed some of the sauce, usually after 4 hours on low. Since they are precooked, the main goal is to warm them thoroughly and let the flavors meld. The sauce should be slightly thickened and glossy.
If you want a thicker sauce, remove the meatballs and reduce the sauce on high for 10–15 minutes. The internal temperature of the meatballs should reach 165°F (74°C) if you want to check, though they are already cooked.
