Before you start

Before starting, ensure that the ground beef is fully thawed if it was previously frozen. Properly thawing meat in the refrigerator prevents uneven cooking and ensures food safety. Gather all ingredients, including the beans and corn, which should be rinsed and drained if using canned varieties.

Prepare the slow cooker by placing the insert on a level, heat-resistant surface near an electrical outlet. Have a clean mixing spoon ready for the final step of stirring the mixture before serving, which will help combine all the flavors after the slow cooking process is complete.

Ingredients at a glance (5)
  • 2 lb ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 packet (1 oz) taco seasoning
  • 16 oz jar salsa

Instructions

Base assembly

  1. Prepare the slow cooker base
Place the raw ground beef into the bottom of the slow cooker insert. Use a spoon to break it up slightly if desired, though the heat will do most of the work during the cooking process.
Look for The beef sits evenly at the bottom of the slow cooker.
Tip Ensure the beef is not frozen before adding to the slow cooker for even cooking.

At this stage, the ground beef is distributed evenly across the bottom of the slow cooker. The surface should be flat, providing a stable foundation for the subsequent layers of beans and corn.

Ensure that the meat is not packed too tightly, which allows the heat to circulate effectively around the beef as it begins to cook.

Seasoning layer

  1. Add aromatics and seasoning
Scatter the black beans and corn over the raw ground beef. Sprinkle the contents of the taco seasoning packet evenly across the top of the mixture, ensuring all ingredients are well covered.
Look for The beans and corn are distributed across the beef surface.
Tip Do not stir the mixture yet, as the layers help the flavors meld during the slow cooking process.

The beans, corn, and seasoning are now layered over the beef. The seasoning should be spread as evenly as possible to ensure consistent flavor distribution. Visually confirm that the dry seasoning covers the entire surface of the beans and corn, which helps it hydrate properly once the salsa is added.

Slow cooking

  1. Pour and slow cook
Pour the jar of salsa over the top of the beans, corn, and seasoning. Cover the slow cooker and cook on high for 4 hours. Once finished, ensure the beef has reached an internal temperature of 160°F (71°C) before serving.
Look for The mixture is bubbling and the beef is fully browned and cooked through.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If the mixture seems too liquid, leave the lid off for the final 30 minutes of cooking to reduce the sauce.

After the salsa is poured over the ingredients and the slow cooker has finished its cycle, the mixture should look glossy and aromatic. The beef will have browned significantly, and the salsa will have reduced slightly into a rich, savory sauce that coats the beans and corn thoroughly.

Common mistakes

Avoid overfilling the slow cooker, as this can lead to uneven cooking and potential spills during the heating process. Another common mistake is stirring the ingredients too early; keeping the layers intact until the cooking time is complete allows the flavors to develop correctly.

Be cautious not to use high-heat settings for too long if the slow cooker runs hot, as this can cause the edges of the beef to become overly dry. Always ensure the lid is properly seated to maintain the necessary moisture levels throughout the entire duration of the cooking cycle.

How to tell it’s done

The filling is considered done when the ground beef has reached a safe internal temperature of 160°F (71°C). At this point, the beef should be uniformly browned and tender, and the salsa, beans, and corn should be well-integrated into a thick, flavorful sauce.

If using a meat thermometer, insert it into the center of the meat mixture to verify the temperature. The texture should be moist but not overly soupy. If the mixture appears too thin, remove the lid for the final 30 minutes to allow excess moisture to evaporate, resulting in a thicker consistency.

  • Ground meat: 160°F (71°C) in the thickest part
