Before you start

Before starting, ensure that all ingredients are measured and ready. If you prefer smaller pieces of onion, dice it finely rather than slicing. Prepare the chicken by trimming any excess fat if desired.

Have your serving toppings—refried beans, cheese, avocado, and cilantro—prepped in bowls so you can assemble the tostadas quickly once the chicken is ready to serve. This preparation ensures a smooth process and keeps your workspace clean throughout the assembly.

Ingredients at a glance (12)
  • 3 lb chicken breasts
  • 15 oz fire-roasted crushed tomatoes
  • 3 chipotle peppers in adobo
  • 1 white onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp mexican oregano
  • 4 oz cream cheese
  • corn tostadas, for serving
  • refried beans, for serving
  • crumbled queso fresco, for serving
  • avocado, sliced or diced, for serving
  • fresh cilantro, for serving

Instructions

Layering the ingredients

  1. Assemble the slow cooker
Place the chicken breasts into the bottom of the slow cooker insert. Add the fire-roasted crushed tomatoes, chipotle peppers in adobo, sliced white onion, minced garlic, and Mexican oregano. Ensure the ingredients are somewhat evenly distributed to allow for consistent cooking throughout the slow cooker.
Look for The slow cooker is filled with all main ingredients.
Tip Keep the chicken breasts whole so they remain juicy during the long cook time.

The slow cooker should be filled with the chicken breasts at the bottom, topped with the aromatics and tomatoes. The liquid from the tomatoes and the adobo sauce should begin to seep around the chicken. Ensure the lid is firmly sealed to trap the steam, which is essential for consistent cooking. At this stage, everything should look neatly arranged and ready for the long, slow transformation.

Slow cooking and blending

  1. Slow cook and shred
Secure the lid and cook on the low setting for 4 hours. Once the time is up, use two forks to finely shred the chicken directly in the pot. The internal temperature of the chicken must reach 165°F (74°C) to be safely cooked through. Once shredded, add the cream cheese and stir thoroughly until the sauce is smooth and creamy.
Look for The chicken is tender and pulls apart easily with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the cream cheese is at room temperature to help it melt into the sauce faster.

At the end of the four-hour cycle, the kitchen will be filled with a savory, smoky aroma. The chicken will look tender and should easily fall apart when poked with a fork. The sauce will have reduced slightly, becoming concentrated and flavorful. Once you stir in the cream cheese, the sauce will transition from a thin, red liquid to a luscious, opaque, and creamy consistency that coats the meat perfectly.

Final assembly

  1. Assemble the tostadas
Prepare the tostadas by spreading a layer of refried beans onto each corn tostada. Spoon a generous amount of the creamy chicken tinga mixture over the beans. Top each tostada with crumbled queso fresco, fresh avocado slices, and chopped cilantro. Serve immediately while the chicken is warm and the tostadas remain crisp.
Look for The chicken is evenly distributed and the toppings look vibrant.
Tip Avoid assembling the tostadas too far in advance, as the base will soften from the sauce.

The chicken tinga should be warm, creamy, and deeply red from the chipotle and tomato base. When piled onto the tostadas, the chicken should hold its shape without being too runny.

The contrast between the hot, savory chicken, the creamy beans, the cool avocado, and the crisp tostada is the final indicator of success. The dish is ready to be enjoyed immediately while all elements are at their peak temperature and texture.

Common mistakes

Avoid over-shredding the chicken, which can turn it into a paste rather than succulent, bite-sized pieces. Another common mistake is adding the cream cheese too early; it should only be stirred in after the chicken is fully cooked and shredded to maintain the desired velvety texture.

Finally, do not add the cold toppings to the tostadas too early, as the moisture from the chicken will quickly soften the crisp corn base, ruining the essential crunch of the dish.

How to tell it’s done

The chicken is perfectly done when it reaches an internal temperature of 165°F (74°C). You can check this by inserting a food thermometer into the thickest part of the chicken breast before shredding.

Visually, the meat should be opaque throughout and pull apart with very little resistance when tugged with two forks. If the chicken still feels tough or resists, allow it to cook for an additional 20 minutes on the low setting.

  • Poultry: 165°F (74°C) in the thickest part

  • Can the chicken tinga be made using chicken thighs instead of breasts?
  • Is it possible to use a different type of cheese if queso fresco is unavailable?
  • How can the spiciness be toned down if the chipotle peppers are too hot?
