Before you start

Before you begin, ensure you have all your ingredients measured and ready to go. Wash and slice the mushrooms, dice the onion, and cut the chicken breast into uniform strips to ensure even cooking. Clear a clean space on your kitchen counter for the slow cooker insert.

Having everything prepped in advance makes the assembly process incredibly smooth and fast, allowing you to get the meal into the slow cooker and ready to cook in just a few minutes of active preparation time.

Ingredients at a glance (7)
  • 1 lb chicken breast strips
  • 8 oz sliced mushrooms
  • 1 cup diced onion
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 can creamy mushroom soup
  • 1/4 cup chicken broth

Instructions

Assembly

  1. Prepare the slow cooker
Place the raw chicken breast strips into the bottom of the slow cooker insert. Ensure the chicken is evenly distributed across the base to allow for consistent cooking throughout the process.
Look for chicken is in an even layer
Tip Pat the chicken dry with paper towels before adding to the cooker to ensure better browning and flavor.

At this stage, the chicken is arranged at the bottom of the slow cooker, covered with vegetables, spices, and the sauce base. Ensure everything is layered correctly without stirring.

The slow cooker insert should be clean and ready to be placed into the base unit. Check that the lid fits snugly to ensure no heat escapes during the cooking process, and confirm the slow cooker is plugged into a reliable power outlet.

Cooking

  1. Add vegetables and seasonings
Scatter the sliced mushrooms and diced onion over the chicken strips. Sprinkle the paprika and garlic powder evenly over the top of the vegetables to distribute the aromatics before adding the liquid components.
Look for vegetables are layered on top
Tip Use fresh mushrooms for the best texture as they will release moisture into the sauce during the long cook time.
  2. Add sauce components
Spoon the creamy mushroom soup over the layered ingredients. Pour the chicken broth over the top of the mixture. Do not stir the ingredients at this stage, as the sauce will incorporate during the cooking process.
Look for sauce is poured over the top
Tip Use a silicone spatula to get all the condensed soup out of the can or bowl.

During the four-hour cook, the kitchen will begin to smell savory and aromatic as the onions and garlic powder release their scent. The sauce will gradually thicken as the mushroom soup and broth combine with the juices from the chicken. You do not need to check on the progress; the low, steady heat is doing all the work. The chicken should remain submerged to stay moist and reach a safe internal temperature.

Finishing

  1. Cook and serve
Cover the slow cooker and cook on low for 4 hours. Ensure the chicken reaches an internal temperature of 165°F (74°C). Allow the dish to rest for 5 minutes before serving to let the sauce thicken.
Look for sauce is thickened and bubbly
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the internal temperature of the thickest piece of chicken to ensure it is fully cooked.

After four hours, the dish is finished when the sauce is rich, creamy, and the chicken is fully cooked. The mushrooms should be tender and the sauce should have a beautiful, uniform color from the paprika. Give the mixture a gentle stir to combine all the elements into a creamy, cohesive stroganoff. Ensure the chicken has reached 165°F (74°C) before turning off the heat and letting it rest briefly before serving.

Common mistakes

Avoid lifting the lid of the slow cooker during the first three hours of cooking, as this releases heat and moisture, which can significantly increase the cooking time. Do not overcook the chicken, as even in a slow cooker, breast meat can become stringy if left for too long beyond the recommended four hours.

Additionally, resist the urge to stir the ingredients too early, as the layering allows the flavors to meld correctly and prevents the vegetables from breaking down too quickly.

How to tell it’s done

The chicken is perfectly done when it is opaque throughout and reaches an internal temperature of 165°F (74°C). The sauce should be thickened, creamy, and clinging to the chicken strips rather than watery.

You will know it is ready when the mushrooms are tender and the onions have softened completely, creating a fragrant, unified sauce. Use a meat thermometer to verify the chicken temperature at the thickest point to ensure it is cooked through while remaining tender and juicy.

  • Poultry: 165°F (74°C) in the thickest part
