Tips for success
For the smoothest soup, blend thoroughly and don’t be afraid to let the immersion blender run for a full minute. If you like a little texture, blend only half the soup and leave the rest chunky.
You can also add a splash of lime juice or a pinch of cayenne at the end to brighten the flavors, though the video does not show these additions.
This soup is incredibly forgiving. If it thickens too much after sitting, stir in extra broth or water to reach your desired consistency.
For a more indulgent bowl, swirl in a spoonful of coconut milk or a dollop of yogurt before serving. The soup also freezes well, so make a double batch and stash some for busy nights.
Variations
- Add ginger and garlic: Stir in 1 tablespoon freshly grated ginger and 2 minced garlic cloves with the curry powder for a more aromatic, zesty flavor. This adds a bright note that complements the sweet potatoes and coconut milk.
- Make it spicy: Add 1/2 teaspoon cayenne pepper or a minced fresh chili along with the curry powder for a kick of heat. Adjust the amount to suit your spice preference, keeping in mind that the coconut milk will temper the heat.
- Top with crunchy elements: Serve the soup topped with toasted pumpkin seeds, crispy fried onions, or a sprinkle of crushed red pepper flakes for added texture and visual appeal. These toppings are not in the video but make a lovely garnish.
- Roasted vegetable version: For a deeper flavor, roast the sweet potatoes, pepper, and onion in a 400°F oven for 25 minutes before adding to the slow cooker. This caramelizes the vegetables and adds a smoky note, though it adds extra time.

Leftover soup can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen the texture if needed.
This soup is perfect for meal prep. You can chop the vegetables and store them in the fridge for up to 2 days before cooking. Or, fully prepare and cook the soup, then refrigerate it for up to 4 days. Reheat individual portions as needed.
Serving ideas
Serve this soup as a main course with crusty bread or a side salad for a complete meal. It’s also lovely as a starter for a dinner party, ladled into small bowls and garnished with a swirl of coconut milk or a sprinkle of fresh cilantro.
The soup is satisfying on its own, but a dollop of yogurt or a drizzle of chili oil can add extra richness and heat.
For a heartier bowl, top with roasted chickpeas, toasted coconut flakes, or a handful of baby spinach that wilts into the hot soup.
You can also serve it alongside grilled cheese sandwiches or a simple green salad. The soup’s mild curry flavor pairs well with naan or pita bread, making it a versatile dish for any occasion.

Crockpot Coconut Curry Sweet Potato Soup

Ingredients
- 2 lb sweet potatoes, peeled and cut into 1-inch cubes
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 tbsp curry powder
- 1 can (13.5 oz) full-fat coconut milk
- 2 cups vegetable broth
- 1 tsp salt, plus more to taste
Instructions
- Place the cubed sweet potatoes in the bottom of a 6-quart slow cooker. Scatter the diced red bell pepper and diced onion over the top. Spread them into an even layer so the vegetables cook evenly.
- Sprinkle the curry powder evenly over the vegetables. Use a spoon or your hand to toss the vegetables gently so the curry coats the sweet potatoes and peppers.
- Pour the coconut milk and vegetable broth over the seasoned vegetables. Stir gently to combine everything. The liquid should mostly cover the vegetables; if not, add a little more broth or water.
- Stir in the salt. Taste the broth and add more salt if needed, keeping in mind that the flavors will concentrate as the soup cooks.
- Cover the slow cooker with the lid. Cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the sweet potatoes are fork-tender. The soup will bubble gently around the edges.
- Once the sweet potatoes are tender, turn off the slow cooker. Use an immersion blender to puree the soup directly in the slow cooker until smooth and creamy. If using a countertop blender, work in batches and vent the lid to let steam escape.
- Taste the soup and adjust seasoning with more salt or curry powder if desired. Ladle into bowls and serve hot. If you like, top with a swirl of coconut milk or a sprinkle of fresh herbs, though the video does not show these.
