Tips for success
To get the best texture, do not overmix the custard. Whisk just until the eggs are broken up and the ingredients are combined—overbeating can incorporate air, causing the casserole to puff too much and then collapse.
Also, make sure the cinnamon rolls are well coated with the custard but not swimming in it. Pressing the rolls down gently helps them absorb the liquid evenly, but avoid stirring, which can break them apart.
For an even more decadent finish, warm the icing just until it's pourable—about 10 to 15 seconds in the microwave. If the icing is too thick, it won't spread easily; if it's too hot, it can melt the rolls into a mess.
Swirl the icing in a figure-eight motion to create ribbons without fully mixing it in. This leaves pockets of creamy icing that contrast with the cinnamon-sugar coating on the rolls.
Variations
- Pecan Praline: Before adding the custard, sprinkle 1/2 cup of chopped pecans over the cinnamon roll pieces. After cooking, drizzle with the cream cheese icing and top with an extra sprinkle of toasted pecans for a crunchy contrast.
- Apple Cinnamon: Peel and chop 1 large apple (such as Honeycrisp) and toss with 1 teaspoon of cinnamon. Layer the apple pieces with the quartered cinnamon rolls before pouring the custard. Cook as directed; the apples soften and add a fruity sweetness.
- Chocolate Swirl: Add 1/2 cup of chocolate chips to the cinnamon roll pieces before pouring the custard. The chips melt during cooking, creating pockets of chocolate throughout. Use chocolate cream cheese icing if available, or warm the regular icing with a spoonful of cocoa powder.
- Pumpkin Spice: Whisk 1/2 cup of pumpkin puree into the custard along with 1 teaspoon of pumpkin pie spice. The pumpkin adds moisture and a seasonal flavor that pairs beautifully with the cinnamon rolls. Cook as directed, and finish with a dusting of cinnamon.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave in 30-second bursts or in a 300°F oven for 10 minutes.
- Freezer
- Freeze the baked, cooled casserole in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 45 to 60 seconds, or in a 300°F (150°C) oven for 10 to 15 minutes.
Store leftover casserole in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave for 30 to 45 seconds, or in a 300°F (150°C) oven for 10 minutes. The icing may soak into the rolls slightly upon reheating, but the casserole will still be delicious.
This casserole can be assembled the night before. Quarter the rolls, place them in the greased slow cooker, and pour the custard over. Cover and refrigerate overnight. In the morning, cook on LOW for 2 1/2 hours, adding 15 to 20 minutes to the cook time because the ingredients are cold. The icing can be warmed just before serving.
Serving ideas
Serve the casserole warm, straight from the slow cooker, with a large spoon or spatula. Scoop out portions that include both the gooey center and the caramelized edges.
Pair with fresh fruit, crispy bacon, or a side of scrambled eggs for a complete breakfast. A dusting of powdered sugar or a drizzle of extra maple syrup can enhance the sweetness, though the icing is usually enough.
For a brunch buffet, keep the slow cooker on the WARM setting so the casserole stays warm throughout the meal. The casserole is best enjoyed fresh, but leftovers can be reheated.
Each serving is generous, so plan for about one scoop per person. The pull-apart texture makes it fun for guests to serve themselves, and the aroma will draw everyone to the table.

Slow-Cooker Cinnamon Roll Casserole with Cream Cheese Icing

Ingredients
- 2 cans refrigerated jumbo cinnamon rolls (with icing)
- 4 large eggs
- 1/2 cup heavy cream
- 1/3 cup maple syrup
- 1 tsp ground cinnamon
- 2 tubs cream cheese icing (from the cinnamon roll cans)
Instructions
- Grease the inside of a 6-quart slow cooker with butter or nonstick spray. Open the cans of refrigerated jumbo cinnamon rolls. Set the icing tubs aside. On a cutting board, quarter each cinnamon roll into four pieces. Place the pieces in the slow cooker in an even layer.
- In a mixing bowl, whisk together the eggs, heavy cream, maple syrup, and ground cinnamon until fully combined and smooth. The mixture should be a uniform light brown color with no streaks of egg.
- Pour the custard evenly over the cinnamon roll pieces in the slow cooker. Use a rubber spatula to gently press the rolls down so they are mostly submerged in the custard. The rolls will absorb the liquid as they cook.
- Cover the slow cooker with the glass lid. Cook on LOW for 2 1/2 hours, or until the cinnamon roll pieces are puffed, golden, and set in the center. The edges will look caramelized and the custard will be bubbling around the sides.
- Check that the internal temperature of the custard reaches 160°F (71°C) to ensure the eggs are fully set. The rolls should spring back lightly when touched, and the center should not be wet or jiggly. If needed, cook for an additional 15 to 20 minutes.
- While the casserole is still hot, open the reserved tubs of cream cheese icing. If the icing is too thick to drizzle, microwave it in a small bowl for 10 to 15 seconds. Use a spoon or spatula to swirl the icing over the top of the casserole, creating ribbons of creamy glaze.
- Let the casserole rest for 5 minutes so the icing sets slightly. Use a large spoon or spatula to scoop out portions, making sure to get some of the caramelized edges and gooey center. Serve warm, directly from the slow cooker.
