Before you start

Before starting, ensure the beef chuck is trimmed of excess hard fat and cut into uniform one-inch cubes to ensure they cook evenly. Have your mushrooms cleaned and sliced to a consistent thickness.

Verify that your slow cooker is clean and placed on a stable, heat-resistant surface away from the edge of the counter to prevent accidental spills during the long cooking cycle.

Ingredients at a glance (6)
  • 2 lb beef chuck, cubed
  • 8 oz white mushrooms, sliced
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 cup Marsala wine
  • 1/2 cup beef broth

Instructions

Initial assembly

  1. Prepare the slow cooker
Place the cubed beef chuck into the basin of a slow cooker. Arrange the sliced white mushrooms in an even layer over the top of the beef.
Look for The beef should be evenly distributed at the bottom of the cooker insert.
Tip Ensure the beef is cut into uniform sizes to promote even cooking throughout the process.

The beef and mushrooms should be layered neatly in the slow cooker basin.

Ensure all ingredients are properly placed before adding the liquids so that the seasoning is distributed correctly and the meat is partially submerged in the Marsala and broth mixture.

Seasoning and braising

  1. Season and add liquids
Sprinkle the garlic powder and dried thyme evenly over the mushroom layer. Pour the Marsala wine and beef broth over the ingredients to provide the base for the sauce.
Look for The liquids will settle around the meat and mushrooms, creating the braising environment.
Tip Do not stir the mixture, as the slow cooker will naturally integrate the flavors during the long cooking time.

After adding the spices and liquids, the mixture should look ready for the long, slow heat. There is no need to stir, as the slow cooker will naturally circulate the juices, ensuring the garlic and thyme flavors penetrate the beef effectively during the cook.

Final cooking and resting

  1. Cook and serve
Cover and cook on low for 6 to 8 hours until the beef is tender. Ensure the beef reaches an internal temperature of 145°F (63°C). Let the meat rest for at least 5 minutes before serving.
Look for The beef should be fork-tender and the sauce should have a rich, glossy consistency.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce is too thin, you may remove the beef and reduce the liquid in a saucepan over high heat for a few minutes.

At the end of the cooking cycle, the beef should appear darker and significantly softer. The aroma should be savory and slightly sweet from the wine. Check that the meat is tender and the sauce has reached a desirable consistency before serving.

Common mistakes

A common mistake is overcrowding the slow cooker with excessive liquid, which prevents the sauce from concentrating properly and can result in a bland, watery dish.

Additionally, avoid lifting the lid frequently during the cooking process, as this lets out essential heat and moisture, significantly increasing the total cooking time and potentially drying out the meat.

How to tell it’s done

The beef is perfectly cooked when it is fork-tender, meaning it yields easily when pierced with a fork or pulled apart. Use a digital meat thermometer to confirm the beef has reached an internal temperature of at least 145°F (63°C).

Once finished, the sauce should be rich, dark, and slightly thickened, clinging to the beef rather than appearing watery.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
