Before you start

Before starting, ensure your slow cooker insert is clean and positioned on a stable, heat-resistant surface. Gather all your ingredients so they are ready for the quick assembly process.

You do not need to preheat the slow cooker, but ensure your chicken breasts are fully thawed if you are using frozen meat, as cooking frozen poultry in a slow cooker is not recommended due to food safety concerns regarding the time it takes to reach a safe internal temperature.

Ingredients at a glance (4)
  • 2 lb chicken breasts, boneless and skinless
  • 1/2 cup sweet chili sauce
  • 1 tbsp sriracha
  • 1/4 cup mayonnaise

Instructions

Assembly Phase

  1. Prepare the Chicken
Place the raw chicken breasts into the bottom of the slow cooker insert. Ensure they are arranged in a single layer to promote even cooking throughout the process.
Look for Chicken is arranged neatly in the bottom of the pot.
Tip Pat the chicken dry with paper towels before adding to the cooker to improve sauce adherence.

The chicken breasts should be placed in a single layer at the bottom of the slow cooker, providing a stable base for the sauce. Ensure the ceramic insert is properly seated in the base before adding any ingredients. The workspace should be clear and all sauce components measured out to make the assembly process efficient and clean.

Cooking Phase

  1. Add the Sauce
Pour the sweet chili sauce over the chicken breasts. Drizzle the sriracha evenly across the surface and add the mayonnaise on top. Cover the slow cooker with the lid.
Look for The sauces are layered on top of the chicken.
Tip Do not stir the sauce ingredients yet; they will combine naturally as the chicken cooks and releases juices.

During the cooking phase, the slow cooker will do all the work. You should notice the sweet chili sauce and mayonnaise beginning to liquefy and combine.

The kitchen will begin to smell slightly spicy and sweet. Avoid lifting the lid during the cooking process to maintain the internal temperature and ensure the chicken cooks thoroughly.

Finishing Phase

  1. Cook and Shred
Cook on low for 4 hours or high for 2 hours. Once finished, ensure the chicken reaches an internal temperature of 165°F (74°C). Shred the chicken using two forks directly in the sauce until fully coated, then let it rest for 5 minutes before serving.
Look for Chicken is opaque and shreds easily with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce looks too thin after shredding, cook uncovered for an additional 15 minutes to thicken.

At the end, the chicken will be soft and ready to be shredded. The sauce should be glossy and thick enough to cling to the meat. After shredding, the dish should look uniform, with every piece of chicken coated in the creamy, vibrant orange sauce. It is now ready to be portioned and served immediately.

Common mistakes

A common mistake is overcooking the chicken, which can lead to a stringy texture. While the slow cooker is forgiving, chicken breasts can become tough if left on the heat for too long after they have reached the target temperature.

Another mistake is stirring the sauce too early; let the ingredients layer as directed so they can meld properly during the cooking cycle rather than becoming a thin, watery liquid.

How to tell it’s done

The chicken is done when it is completely opaque throughout and reaches an internal temperature of 165°F (74°C). Use a meat thermometer inserted into the thickest part of the breast to verify the temperature.

Once cooked, the chicken should pull apart easily with the gentle pressure of two forks. If the meat offers resistance, it needs more time to reach the proper tender state.

  • Poultry: 165°F (74°C) in the thickest part
