Before you start

Before beginning, ensure the workspace is clean and clear. Have the baking sheet lined with parchment paper ready to receive the dipped bites.

Arrange the cheesecake squares, the bowl of melted orange candy, and the ramekin of black sprinkles in a logical assembly line to allow for efficient movement from the dipping station to the tray.

Ingredients at a glance (3)
  • 12 squares chilled cheesecake squares
  • 1 cup orange candy melts, melted
  • 2 tbsp black sprinkles

Instructions

Preparation of the cheesecake

  1. Prepare the workspace
Line a baking sheet with parchment paper to ensure the bites do not stick. Place the chilled cheesecake squares in neat rows on the prepared sheet to keep everything organized and ready for dipping.
Look for The squares should be firm from the refrigerator.
Tip Ensure the squares are cold so they hold their shape during the dipping process.

The squares must be cold, firm, and uniform in shape. Ensure the parchment paper is laid flat on the baking sheet so that the bites sit level, which makes the dipping process much easier and prevents them from tipping over during the transfer.

Dipping and coating

  1. Dip and decorate
Melt the orange candy in a small bowl until smooth. Carefully dip each chilled cheesecake square into the melted orange candy, ensuring an even coating. Immediately sprinkle with black sprinkles while the coating is still tacky.
Look for The coating should be smooth and liquid.
Tip Work quickly so the candy coating does not set before the sprinkles are added.

The candy should be completely melted and smooth, with no lumps remaining. Each square should be coated evenly, and the sprinkles should be applied immediately while the surface is still wet to ensure they stick securely to the orange candy shell.

Setting and finishing

  1. Set and serve
Transfer the coated bites back to the baking sheet. Ensure the internal temperature of the cheesecake reaches 160°F (71°C) if using a custard base that requires cooking through. Allow the candy coating to set completely at room temperature or in the refrigerator before serving to ensure a crisp finish.
Look for The coating will appear matte and firm to the touch.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Do not rush the setting process to avoid smudging the decorative finish.

The bites should be placed on a clean surface and left undisturbed until the coating is completely set. Check that the sprinkles are distributed evenly and that no parts of the cheesecake are exposed before arranging them on a serving platter.

Common mistakes

Avoid using cheesecake that is at room temperature, as it will likely break or melt when dipped into the warm candy.

Another common mistake is waiting too long to apply the sprinkles; if the candy coating sets too much, the sprinkles will not adhere properly.

Work in small batches to ensure the coating remains at the ideal consistency for the best possible results.

How to tell it’s done

The cheesecake bites are considered done when the outer candy coating has fully hardened and is no longer tacky to the touch. The surface should be smooth, vibrant, and firm, providing a satisfying snap when bitten.

Ensure the egg-based cheesecake center has reached a safe internal temperature of 160°F (71°C) to ensure it is cooked through.

  • Egg dishes: 160°F (71°C) in the thickest part
