Before you start

Before beginning, ensure all ingredients are measured and ready. Preheat the oven to 375°F (190°C) to ensure it reaches the target temperature before the dish is placed inside. Clean the workspace thoroughly. Have the baking dish placed on a stable surface for easy assembly.

If the chicken thighs are large, they can be trimmed of excess fat, though leaving a little adds flavor. Ensure the frozen peas are kept in the freezer until the very moment they are needed to prevent them from thawing prematurely.

Ingredients at a glance (4)
  • 2 cups long-grain white rice
  • 6 boneless skinless chicken thighs
  • 4 cups tomato-based broth with cumin and turmeric
  • 1 cup frozen peas

Instructions

Assembly and Layering

  1. Prepare the Base
Preheat the oven to 375°F (190°C). In a large rectangular ceramic baking dish, spread the long-grain white rice evenly across the bottom. Arrange the chicken thighs on top of the rice in a single layer to ensure even cooking.
Look for Rice is spread evenly and chicken is arranged in a single layer.
Tip Ensure the rice is fully submerged in the broth later to cook evenly.

At the end of this phase, the rice should be spread evenly across the bottom of the dish, and the chicken thighs should be arranged in a single, orderly layer on top. The dish should look clean and organized, with all ingredients ready for the liquid addition. Ensure there is enough space in the dish for the broth to circulate around the chicken without overflowing. This initial setup is crucial for ensuring that every piece of chicken cooks uniformly and that the rice is evenly distributed.

Adding Liquid and Seasoning

  1. Add Liquid and Peas
Pour the tomato-based broth with cumin and turmeric over the chicken and rice until fully covered. Scatter the frozen peas over the top of the dish to distribute them evenly among the chicken and rice.
Look for Liquid covers the rice and peas are visible on the surface.
Tip Use a glass pitcher to pour slowly so the rice layer remains undisturbed.

Once the broth is poured and the peas are scattered, the dish should look vibrant, with the orange-tinted liquid beginning to soak into the rice. The peas should be visible on the surface, adding color.

The broth should be sufficient to cover the rice, providing the necessary moisture for the baking process. If any rice is exposed above the liquid, gently shift it with a spoon to ensure it is submerged, as this is essential for proper hydration and even cooking throughout the entire baking duration.

Baking to Perfection

  1. Bake and Serve
Place the baking dish in the oven and bake until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C). Remove from the oven and let the dish rest for 5 minutes before serving.
Look for Chicken is cooked through and rice has absorbed most of the liquid.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the internal temperature of the thickest part of the chicken thigh.

After baking, the dish should smell fragrant and savory, with the chicken thighs appearing tender and cooked through. The rice should be light, fluffy, and golden-orange, with the peas bright and tender. The liquid should be mostly absorbed, creating a cohesive, moist meal. If the top of the chicken looks a bit dry, a quick drizzle of the pan juices can help. The dish should be resting on a heat-proof surface, allowing the internal moisture to redistribute before you begin serving your meal.

Common mistakes

A common mistake is using too much or too little liquid, which can result in either undercooked, crunchy rice or a soggy, porridge-like texture. Always measure the broth carefully against the amount of rice used.

Another error is overcrowding the baking dish, which prevents even heat distribution and can lead to unevenly cooked chicken. Ensure the chicken is in a single layer. Finally, failing to preheat the oven properly will extend the cooking time and potentially dry out the chicken before the rice finishes cooking.

How to tell it’s done

The dish is considered done when the rice has absorbed the majority of the liquid and has reached a tender, fluffy consistency. Most importantly, the chicken must be fully cooked through. Using a meat thermometer, ensure the thickest part of the chicken thigh reaches an internal temperature of 165°F (74°C).

The surface of the chicken should appear cooked and slightly browned, and the rice should be moist but not overly soupy. Allow the dish to rest for 5 minutes before serving to let the flavors settle.

  • Poultry: 165°F (74°C) in the thickest part
