Before you start

Before starting the assembly, clear sufficient flat space in your refrigerator so the 9x13 inch baking dish can rest level during chilling. Unwrap the graham crackers and keep a clean knife handy to score crackers to size if your baking pan tapers slightly at the corners.

Have your prepared vanilla pudding filling and chocolate glaze at an easily spreadable room temperature on your work station alongside a reliable offset spatula.

Ingredients at a glance (3)
  • 1 box graham crackers
  • 4 cups vanilla pudding filling, prepared or store-bought
  • 1 cup chocolate glaze, store-bought or made ahead

Instructions

Layering the Base and First Pudding Coat

  1. Layer the Base and Pudding
Arrange a single tight layer of graham crackers across the bottom of the 9x13 inch baking dish. Spread half of the vanilla pudding filling smoothly and evenly over the crackers using an offset spatula.
Look for The pudding layer should be level and reach all four corners of the pan.
Tip Break graham crackers into smaller pieces if needed to fit snugly into the edges of the dish.

The bottom of the baking dish should be neatly tiled with graham crackers, leaving virtually no gaps. The first portion of vanilla pudding filling should be smoothed out in a uniform, level layer, covering the crackers completely and reaching all four corners of the pan.

Adding the Mid-Layer and Top Crackers

  1. Add Second Layer and Top Crackers
Place another complete layer of graham crackers over the pudding. Spread the remaining vanilla pudding filling evenly across the crackers, then top with a final flat layer of graham crackers.
Look for The top cracker layer should form a neat, flat surface across the pan.
Tip Press down very lightly on the top cracker layer to ensure even contact with the pudding beneath.

The second tier of graham crackers should sit securely on the pudding without sinking unevenly. The remaining vanilla filling covers this tier completely, topped with a flat, unbroken grid of crackers ready to support the chocolate glaze.

Glazing and Setting in the Refrigerator

  1. Spread Glaze and Chill
Spread the rich chocolate glaze smoothly across the top cracker layer until fully coated. Transfer the baking dish to the refrigerator and chill for at least four hours until thoroughly set.
Look for The glaze should form a glossy, even chocolate shell across the cake.
Tip Cover the dish loosely once the glaze sets slightly so it stays clean in the refrigerator.

The rich chocolate glaze should coat the top graham cracker layer in a continuous, glossy sheet from side to side. Once chilled for the full duration, the cake feels set and firm across the surface with no liquid pooling.

Common mistakes

The most common mistake is slicing into the cake too soon before the graham crackers have had sufficient hours to absorb moisture from the pudding.

Another mistake is using overly warm chocolate glaze, which can melt the pudding beneath or cause the top cracker layer to float out of alignment. Finally, be sure to bring both the pudding and the glaze all the way to the edges of the dish so outer slices do not dry out.

How to tell it’s done

The eclair cake is done when it has chilled continuously for at least four hours and the layers have fully integrated.

To test doneness, insert a butter knife gently into one corner; the blade should slide effortlessly through softened crackers with zero crunch or resistance.

The chocolate glaze on the surface should appear glossy yet firm to the touch, and slices lifted from the pan should stand upright cleanly without sliding apart.
