Before you start

Before you begin, ensure all your ingredients are measured and ready. Cook the pasta according to the package directions, but aim for al dente, as it will soften further in the oven.

Preheat your oven to the required temperature and ensure your baking dish is lightly greased to prevent sticking. Having your oven preheated and your ingredients at room temperature will help the casserole bake evenly and quickly once assembled.

Ingredients at a glance (6)
  • 1 lb ground beef
  • 1 lb sausage
  • 1 lb pasta, cooked
  • 24 oz sauce
  • 3 cups shredded mozzarella
  • 3 oz pepperoni slices

Instructions

Browning the Meat

  1. Brown the meats
Heat a large skillet over medium-high heat. Add the ground beef and sausage. Cook, breaking up the meat with a spatula, until the meat is browned and reaches an internal temperature of 160°F (71°C). Drain excess grease carefully.
Look for The meat is browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the meat is crumbled into small pieces for better texture.

The meat should be thoroughly browned with no visible pink areas. You will hear a steady sizzle as the moisture evaporates and the fat renders.

The aroma should be savory and fragrant, indicating that the Maillard reaction has occurred, which is essential for the depth of flavor in the final casserole.

Assembling the Base

  1. Combine pasta, sauce, and meats
Preheat the oven to 375°F (190°C). In a large bowl or pot, combine the cooked pasta, the sauce, and the browned sausage and ground beef mixture. Toss thoroughly until the pasta is completely coated and saucy.
Look for The pasta is evenly coated in red sauce and meat.
Tip Toss gently to keep the cooked pasta from breaking apart.

The mixture should look uniform, with the sauce evenly coating every piece of pasta and meat. There should be no dry pockets of pasta. The consistency should be thick and clinging, not runny, which ensures the casserole holds its shape when scooped out onto plates after baking.

Final Bake

  1. Top and bake the casserole
Transfer the saucy pasta and meat mixture into a large round glass dish. Spread it out evenly. Top generously with the shredded mozzarella and arrange the pepperoni slices on top. Bake for 15 to 20 minutes until bubbling and golden brown.
Look for The cheese is melted, bubbling, and golden brown.
Tip Watch the cheese during the final minutes to prevent over-browning.

The cheese should be completely melted and starting to form golden brown spots. You will see the sauce bubbling along the sides of the dish. The fragrance of toasted cheese and savory herbs will be prominent in the kitchen, signaling that the dish is ready to be pulled from the oven.

Common mistakes

A common mistake is overcooking the pasta before it even hits the oven. If the pasta is too soft initially, it will turn mushy during the bake. Always stop boiling when the pasta still has a firm center.

Another error is neglecting to drain the excess grease from the meat. Too much fat can cause the sauce to separate and make the final dish feel overly oily. Take a moment to drain the skillet well before adding the sauce to ensure the perfect consistency.

How to tell it’s done

The casserole is done when the cheese is fully melted, bubbling vigorously around the edges, and flecked with golden-brown spots.

Because the ground beef and sausage are fully browned ahead of time to a safe 160°F (71°C), the baking phase is complete when the center is steaming hot and reaches at least 165°F (74°C) for safe serving.

  • Ground meat: 160°F (71°C) in the thickest part
