Before you start

Before you begin, ensure all your ingredients are prepped and ready on the counter. Grate your cheddar cheese fresh from a block for the best melting performance, as pre-shredded varieties often contain anti-caking agents that hinder a smooth, gooey finish.

Have your baking dish nearby and preheat your oven to the specified temperature so it is fully ready when your assembly is complete. Keep a clean workspace to ensure a stress-free cooking process.

Ingredients at a glance (3)
  • 1 1/2 lb ground beef
  • 8 count flour tortillas
  • 3 cups shredded cheddar cheese

Instructions

Browning the beef

  1. Prepare the beef filling
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and no longer pink. Drain any excess fat from the pan. Ensure the meat reaches an internal temperature of 160°F (71°C) to ensure it is cooked through properly.
Look for the beef is browned and crumbly
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Season the beef with your favorite taco spices while it browns for maximum flavor.

The meat should be dark brown, crumbly, and fragrant. Ensure all liquid has evaporated or been drained, as excess moisture will make the final casserole soggy rather than rich and layered.

Layering the ingredients

  1. Assemble the casserole
Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, create a base layer using half of the tortillas. Spoon half of the cooked ground beef evenly over the tortillas, then sprinkle with a portion of the shredded cheddar cheese. Repeat the layers once more to finish the assembly, ending with a generous layer of cheese on top to ensure a bubbly finish.
Look for the casserole is layered evenly
Tip Overlap the tortillas slightly to cover the base of the dish completely.

The layers should be consistent, with the tortillas completely covered by the beef and cheese. Ensure the final layer of cheese is spread to the very edges of the dish for a uniform crust.

Baking to perfection

  1. Bake until golden
Place the baking dish in the preheated oven and bake for 20 to 25 minutes. The casserole is ready when the cheese is melted and bubbling, and the edges are slightly golden brown. Remove from the oven and let it rest for 5 minutes before serving to allow the layers to set.
Look for the cheese is golden and bubbling
Tip Cover with foil for the first 15 minutes if the cheese is browning too quickly.

The casserole should look uniform, with the cheese fully melted and bubbling across the entire surface. If the edges are browning too fast, the heat is likely too high, so keep a close watch.

Common mistakes

A common mistake is using tortillas that are too dry; ensure they are fresh to maintain the right texture. Another issue is overcrowding the baking dish, which can lead to uneven cooking.

Avoid excessive heat during the initial browning phase, as this can toughen the meat before it even reaches the oven. Finally, do not skip the resting period, as this allows the juices to redistribute and makes serving much cleaner.

How to tell it’s done

The casserole is done when the cheese on top is fully melted, bubbling vigorously, and has achieved a light golden-brown color in spots.

The internal temperature of the beef should have reached 160°F (71°C) during the initial browning, and the heat from the oven ensures the entire casserole is heated through.

It should look cohesive and smell savory, with the aroma of toasted tortillas and melted cheese filling the kitchen.

  • Ground meat: 160°F (71°C) in the thickest part
