Before you start

Before you begin cooking, gather all your ingredients and equipment to ensure a smooth process. Measure out the cottage cheese and shredded mozzarella. Set up a large pot for boiling the pasta and a colander in the sink for draining.

Have your large skillet ready for browning the ground beef. Position an oven rack in the center position and prepare a 9x13-inch glass casserole dish by placing it nearby on a heat-safe surface. Having everything organized beforehand prevents overcooking the pasta or burning the beef.

Ingredients at a glance (5)
  • 16 oz fusilli pasta
  • 1 lb ground beef
  • 24 oz marinara sauce
  • 16 oz cottage cheese
  • 8 oz shredded mozzarella cheese

Instructions

Pasta Prep and Boiling

  1. Boil the Pasta
Bring a large pot of water to a rolling boil. Add the fusilli pasta and cook for 8 to 10 minutes, or until just under al dente. Drain the pasta thoroughly in a colander and set aside without rinsing.
Look for The pasta should still have a firm bite in the center.
Tip Undercooking the pasta slightly prevents it from turning mushy during baking.

At the end of this first phase, the fusilli should be drained and resting in the colander. It will smell faintly of wheat, and the texture must be distinctly firm to the touch, with a visible white speck in the center when bitten. This ensures it is ready to absorb the rich marinara sauce during the baking process without losing its structural integrity.

Sauce and Pasta Assembly

  1. Brown the Ground Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, for 6 to 8 minutes until it is completely browned and has reached a safe internal temperature of 160°F (71°C). Drain any excess grease.
Look for The meat should be evenly browned with no pink remaining.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a wooden spoon or spatula to break the meat into small, uniform crumbles.
  2. Combine Sauce and Pasta
Pour the marinara sauce into the skillet with the browned beef and simmer over low heat for 5 minutes. Stir the drained fusilli and the cottage cheese into the meat sauce, folding gently until the pasta is evenly coated.
Look for The mixture should look creamy, pinkish-red, and completely combined.
Tip Folding gently prevents the tender pasta spirals from breaking apart.

By the end of this phase, the kitchen will fill with the savory aroma of simmered garlic, tomatoes, and browned beef. The warm fusilli, rich meat sauce, and creamy cottage cheese should be thoroughly combined in the skillet. The mixture should look uniform, thick, and creamy, with the cottage cheese starting to melt slightly from the residual heat of the pasta.

Baking and Melting

  1. Assemble the Bake
Preheat the oven to 375°F (190°C). Transfer the pasta and meat sauce mixture into a large 9x13-inch glass casserole dish, spreading it into an even layer. Sprinkle the shredded mozzarella cheese uniformly over the top.
Look for The cheese should cover the pasta layer from edge to edge.
Tip Make sure the pasta is fully covered to prevent the top noodles from drying out.
  2. Bake to Golden Perfection
Bake in the preheated oven for 20 to 25 minutes, or until the cheese is melted, bubbly, and golden-brown. Remove the dish from the oven and let it rest on a kitchen towel for 10 minutes before serving.
Look for The edges should bubble vigorously and the cheese crust should be beautifully browned.
Tip Letting the casserole rest makes it much easier to slice and serve neatly.

After baking, the casserole will have a gorgeous, bubbly, golden-brown mozzarella crust on top. The edges of the dish will show active bubbling from the sauce, and the aroma of toasted cheese and rich marinara will be intense.

The cheese should pull in long, stretchy strands when lifted with a spatula, confirming that the dish is hot throughout and ready to rest.

Common mistakes

One common mistake is overcooking the pasta during the boiling stage. Because the fusilli bakes in a wet sauce for over twenty minutes, fully cooked pasta will become incredibly mushy and lose its texture.

Another error is failing to drain the excess grease from the browned ground beef before adding the marinara sauce. This can lead to a greasy, separated sauce that pools at the bottom of the casserole dish. Always drain the beef to keep the flavors clean and the texture light.

How to tell it’s done

The pasta bake is perfectly done when the mozzarella cheese on top is completely melted, bubbly, and has developed deep golden-brown spots across the surface. You should see the red sauce bubbling actively around the edges of the dish.

Because the ground beef was already cooked to a safe internal temperature of 160°F (71°C) in the skillet, the baking time is primarily focused on melting the cheese and heating the interior until steaming hot.

  • Ground meat: 160°F (71°C) in the thickest part
