Before you start

Before beginning, ensure the oven is fully preheated to 375°F (190°C) to allow for immediate and consistent cooking. Gather all ingredients, including the dry ziti, raw ground turkey, tomato sauce, and alfredo sauce.

Having the ingredients ready on the counter will allow for quick assembly. Ensure the baking dish is clean and dry. If the turkey was stored in the refrigerator, keep it chilled until the very last moment before adding it to the dish to maintain food safety standards.

Ingredients at a glance (4)
  • 1 lb ziti pasta, uncooked
  • 1 lb ground turkey
  • 24 oz tomato sauce
  • 15 oz alfredo sauce with parmesan

Instructions

Assembly Phase

  1. Assemble the base
Preheat the oven to 375°F (190°C). In a large 9x13 inch ceramic baking dish, spread the uncooked ziti tubes in an even layer across the bottom. Evenly distribute the raw ground turkey crumbles over the top of the dry pasta noodles.
Look for Ensure the pasta and meat are distributed evenly to allow for uniform cooking throughout the dish.
Tip Using a wide baking dish helps the pasta cook evenly in the sauce without overcrowding.

The ziti should be spread in a single, even layer across the bottom of the dish, and the ground turkey should be distributed evenly over the top. Check that no large clumps of meat remain. The assembly is complete when the ingredients are layered neatly and ready for the sauce.

Baking Phase

  1. Add sauces and bake
Pour the tomato sauce over the ziti and turkey mixture, ensuring the pasta is just covered. Spoon the parmesan alfredo sauce evenly over the top layer. Place the dish into the preheated oven and bake until the top is golden and the edges are bubbling. The ground turkey must reach an internal temperature of 165°F (74°C).
Look for The sauce should be bubbling around the edges and the top should be lightly browned and set.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the top browns too quickly, cover it loosely with aluminum foil for the remainder of the time.

During this phase, the aroma of the tomato sauce and parmesan will fill the kitchen. The dish is ready when the top is golden and the sauce is bubbling. Verify the internal temperature of the turkey with a thermometer to ensure it reaches 165°F (74°C) before removing from the oven.

Resting Phase

  1. Rest and serve
Remove the baking dish from the oven. Allow the pastitsio to rest for 10 minutes before serving. This resting time allows the sauce to thicken slightly for easier serving.
Look for The dish should hold its shape slightly better after resting, making it easier to scoop portions.
Tip Resting is essential for the texture of the sauce and the tenderness of the meat.

The dish should settle as it cools for 10 minutes. The sauce will thicken, and the pasta will absorb any remaining moisture. Check that the dish is no longer boiling rapidly before attempting to scoop and serve. The final result should be firm enough to hold its shape on a plate.

Common mistakes

A common mistake is using too little sauce, which can leave the pasta dry or undercooked. Ensure the tomato sauce covers the pasta completely.

Another error is failing to break the ground turkey into small enough pieces; large chunks of meat take longer to cook and may not reach the required internal temperature.

Finally, skipping the resting time can result in a loose, runny dish that is difficult to serve, so patience after removing it from the oven is vital.

How to tell it’s done

The pastitsio is ready when the sauce is bubbling vigorously around the edges of the dish and the top layer of alfredo sauce has developed a golden-brown crust.

Use a food thermometer to check the center of the dish; the ground turkey must reach an internal temperature of at least 165°F (74°C) to be safely cooked. The pasta should be tender but not mushy, indicating it has absorbed the correct amount of liquid.

  • Poultry: 165°F (74°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
