Before you start

Before beginning, ensure your slow cooker is clean and placed on a stable, heat-resistant surface. Have all your ingredients measured and ready to go. If your sun-dried tomatoes are whole, chop them into bite-sized pieces for consistent texture.

Ensure the chicken is completely thawed if it was previously frozen, as cooking from frozen is not recommended for slow cookers. Have your serving bowls and a ladle cleaned and ready for the final step.

Ingredients at a glance (6)
  • 1 1/2 lb boneless skinless chicken thighs
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 packet Italian herb seasoning
  • 2 cups chicken broth
  • 2 cups fresh baby spinach

Instructions

Preparation and layering

  1. Combine ingredients
Place the raw chicken thighs into the basin of the slow cooker. Add the drained cannellini beans and chopped sun-dried tomatoes on top of the chicken. Sprinkle the entire packet of Italian herb seasoning over the mixture to ensure even flavor distribution.
Look for Ensure the chicken is arranged in a single layer at the bottom of the slow cooker for even heat distribution.
Tip Adding the seasonings directly over the protein and beans helps the flavors penetrate during the long cooking process.

At this stage, all ingredients should be neatly layered in the slow cooker insert. The chicken should be at the bottom, topped with the beans and sun-dried tomatoes. Everything should look organized and ready for the broth to be poured over. Ensure the seasoning is distributed evenly across the surface to prevent concentrated clumps of herbs, which ensures every bite is seasoned perfectly once the cooking process begins.

Slow cooking cycle

  1. Slow cook the stew
Pour the chicken broth over the ingredients in the slow cooker. Cover the slow cooker with its lid and set to low heat for 4 hours. Allow the mixture to cook undisturbed until the chicken is tender and fully cooked through to an internal temperature of 165°F (74°C).
Look for The stew is ready when the chicken shreds easily with a fork and the liquid has developed a rich, aromatic flavor.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid opening the lid during the first few hours of cooking to maintain the internal temperature of the slow cooker.

During the cooking phase, the slow cooker should be covered and left undisturbed. The kitchen will begin to smell like garlic, herbs, and savory chicken. Check that the lid is tightly sealed to keep the heat and moisture inside. The liquid should be bubbling gently. Do not be tempted to open the lid to stir, as this releases heat and significantly increases the total cooking time required for the chicken to reach safety.

Shredding and finishing

  1. Finish and serve
Once the chicken is cooked, use two forks to shred the thighs directly in the pot. Stir in the fresh baby spinach and let it sit for a few minutes until the residual heat wilts the leaves. Let the stew rest for 5 minutes before serving in bowls.
Look for The spinach should be bright green and just wilted, adding a fresh texture to the hearty stew base.
Tip If the stew appears too thin, you can mash a few of the beans against the side of the pot to naturally thicken the liquid.

The final phase involves shredding the tender chicken and incorporating the fresh spinach. The stew should look hearty and thick. The shredded chicken should be fully coated in the herb-infused liquid.

Once the spinach is stirred in, it should wilt quickly, turning a vibrant green. The stew is now ready to be portioned into bowls, appearing as a cohesive, steaming dish with a balanced mixture of protein, beans, and vegetables.

Common mistakes

A common mistake is overcrowding the slow cooker or using too much liquid, which can result in a watery stew rather than a rich, concentrated broth. Ensure the chicken is submerged but not swimming in excess liquid.

Another error is adding the spinach too early; it only needs a few minutes of residual heat to wilt properly. Adding it at the start will turn the spinach mushy and lose its vibrant color and fresh, slightly bitter contrast to the savory stew.

How to tell it’s done

The chicken is perfectly done when it reaches an internal temperature of 165°F (74°C) measured with a meat thermometer at the thickest part of the meat. Visually, the chicken should be opaque throughout and shred easily with the pressure of a fork.

The stew should smell fragrant and savory, with the liquid reduced to a thick, flavorful consistency that clings slightly to the beans and shredded chicken, indicating that the flavors have properly melded together.

  • Poultry: 165°F (74°C) in the thickest part
