Tips for success
For the best flavor, use a good-quality condensed soup and a sharp, whole-milk mozzarella. The garlic herb butter adds a final layer of savory richness—if you don’t have it, a pat of regular butter with a pinch of garlic powder works in a pinch.
Don’t be tempted to add extra liquid; the soup provides enough moisture for the slow cooker.
If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking to let some steam escape. Stir gently before serving to distribute the sauce evenly.
Leftovers can be stored in the fridge for up to 4 days, and the dish reheats beautifully in the microwave or on the stovetop.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden, then add them to the slow cooker with the other ingredients. They’ll add an earthy depth to the sauce.
- Swap the Soup: Use condensed cream of mushroom or cream of chicken soup instead of broccoli for a different flavor profile. The result is still creamy and comforting.
- Spice It Up: Add 1/2 teaspoon red pepper flakes or a dash of hot sauce to the soup before layering. The heat pairs well with the rich cheese and garlic.
- Make It Lighter: Use reduced-fat cream of broccoli soup and part-skim mozzarella to cut down on fat without sacrificing flavor. The texture will be slightly less creamy but still delicious.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 1-minute intervals, stirring between, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of chicken broth or water when reheating to loosen it if needed.
Reheat gently in the microwave or on the stovetop over low heat, stirring occasionally, until hot throughout.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve the turkey and cauliflower hot, spooned over cooked penne, rice, or mashed potatoes to soak up the creamy sauce. A sprinkle of fresh parsley or chives adds a pop of color, though it’s optional. For a low-carb option, serve over steamed greens or cauliflower rice.
This dish is hearty enough to stand alone, but a side salad with a tangy vinaigrette balances the richness. Crusty bread is perfect for dipping into the sauce.
The leftovers make a great filling for sandwiches or wraps, or you can stir them into cooked pasta for a quick second meal.

Slow-Cooker Mozzarella Cauliflower Turkey Breast

Ingredients
- 1 1/2 lb boneless turkey breast cutlets
- 4 cups cauliflower florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter
Instructions
- Place the turkey breast cutlets in the center of the slow cooker insert. Scatter the cauliflower florets around the turkey, tucking them into the corners. Spoon the condensed cream of broccoli soup over the turkey and cauliflower, spreading it gently to cover as much as possible.
- Sprinkle the shredded mozzarella evenly over the soup, then dot the garlic herb butter on top. Cover the slow cooker with the lid.
- Set the slow cooker to low and cook for 4 to 5 hours, until the turkey is fork-tender and reaches an internal temperature of 165°F (74°C). The cauliflower should be tender when pierced with a fork. Do not lift the lid during the first 3 hours to keep the heat steady.
- Once the turkey is cooked through, use two forks to shred the cutlets directly in the slow cooker. Stir the shredded turkey into the sauce and cauliflower, coating everything with the creamy mozzarella mixture. Let it sit for a few minutes so the sauce thickens slightly.
- Spoon the bubbling turkey and cauliflower mixture onto plates or over cooked pasta. Serve hot, with extra sauce spooned over the top.
