Before you start

Before starting, ensure that all ingredients are ready for assembly. Thaw the beef sirloin tips completely in the refrigerator if they were frozen, as adding frozen meat to a slow cooker can lead to uneven cooking and potential food safety issues.

Chop the onions into thick, hearty slices so they hold their structure during the long braising process. Have your measuring cups and the slow cooker insert cleaned and dried, and ensure your workspace is clear of any clutter to make the layering process smooth and efficient.

Ingredients at a glance (4)
  • 2 lb beef sirloin tip cubes
  • 2 cups thick sweet onion slices
  • 1 packet onion soup mix
  • 1 cup beef broth

Instructions

Initial Assembly

  1. Prepare the slow cooker base
Place the raw beef sirloin tip cubes into the bottom of the slow cooker insert. Ensure they are distributed in an even layer to promote consistent cooking throughout the process.
Look for beef cubes are evenly spread
Tip Trim any excess large pieces of fat if desired before placing the beef in the slow cooker.

At the end of this phase, the beef should be neatly arranged in the base of the slow cooker. Everything is raw, but the arrangement is critical for success. Take a moment to ensure the beef is distributed evenly across the bottom of the insert. This ensures that every piece of meat has direct contact with the heat source, promoting consistent cooking from the very start of the process.

Seasoning and Liquid Addition

  1. Layer the aromatics and seasoning
Layer the thick sweet onion slices over the beef. Sprinkle the contents of the onion soup mix evenly across the onions, then pour the beef broth over the entire mixture to start the braising process.
Look for liquid covers the base
Tip Do not stir the ingredients; layering them helps the flavors meld as the onions steam and the beef braises.

The slow cooker should now contain the beef, topped with the onions, seasoning, and broth. The liquid should just barely cover the beef cubes. If the liquid seems too low, you can add a splash of water, but do not submerge the ingredients entirely. The onions should remain visible on top, as they will slowly wilt and release their moisture into the broth throughout the long cooking cycle.

Slow Cooking

  1. Slow cook and serve
Cover the slow cooker and cook on low for 8 hours. Once the beef reaches an internal temperature of 145°F (63°C), turn off the heat and let it rest for 5 minutes before serving over fluffy white rice.
Look for beef is fork tender and gravy is thickened
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check the temperature in the center of the largest beef piece to ensure accuracy.

After 8 hours of cooking, the kitchen should smell deeply savory and rich. The beef should be tender enough to pierce with a fork, and the onions should be soft and translucent.

The liquid will have transformed into a flavorful, aromatic gravy. Perform a final temperature check to ensure the meat is fully cooked, then let it rest for 5 minutes before portioning the beef and gravy over your prepared fluffy white rice.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the beef from cooking evenly and result in excess liquid that dilutes the flavor. Another error is lifting the lid too frequently during the cooking process; every time the lid is removed, heat escapes and the cooking time must be extended.

Finally, failing to let the meat rest after cooking can lead to a loss of moisture, making the beef feel dry despite the long, slow braise. Always allow the meat at least 5 minutes to rest before serving.

How to tell it’s done

The beef is perfectly done when it is fork-tender, meaning it yields easily when poked with a fork or pulled apart with a spoon. You should verify the doneness using a reliable meat thermometer to ensure the beef has reached an internal temperature of at least 145°F (63°C).

At this stage, the gravy should have a glossy, slightly thickened consistency from the natural juices and the onion soup mix. If the gravy is too thin, you can remove the lid for the final 30 minutes of cooking to allow some liquid to evaporate.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
