Tips for success
For the best flavor, choose a high-quality brown gravy—whether canned, jarred, or homemade. Look for one with a deep, savory profile that isn't too salty.
If using canned, taste it first and adjust seasoning accordingly. You can also enhance the gravy with a splash of Worcestershire sauce or a teaspoon of Dijon mustard, though the recipe is delicious as-is.
Don't rush the cooking. Low and slow is the key to tender pork. If you're short on time, HIGH works, but the meat may be slightly less fork-tender.
To thicken the gravy at the end, mix cornstarch with cold water and stir it in, then cook for 15 minutes. For a richer sauce, stir in a splash of heavy cream just before serving—but that's optional.
Variations
- Beef Version: Swap the pork for a beef chuck roast. Cook on LOW for 8-10 hours until fork-tender. The gravy will be even richer. Shred and serve as a hearty sandwich filling.
- Add Onions: Layer 1 large sliced onion over the roast before adding the mushrooms. The onions will caramelize slowly, adding sweetness and depth to the gravy.
- Spicy Kick: Stir in 1-2 chopped chipotle peppers in adobo sauce with the gravy for a smoky heat. Serve with a dollop of sour cream to balance the spice.
- Herb Infusion: Add 2 sprigs of fresh thyme and 1 sprig of rosemary to the pot before cooking. Remove before shredding. The herbs infuse the gravy with aromatic notes.

Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the gravy has thickened too much.
This recipe is perfect for meal prep. Cook the pork as directed, shred, and store in the refrigerator for up to 4 days. It also freezes well for up to 3 months. To serve, thaw overnight in the fridge and reheat gently. The pork can be used in sandwiches, over rice, or in tacos.
Serving ideas
Serve the shredded pork and mushrooms over creamy mashed potatoes, egg noodles, or steamed rice to soak up the rich gravy.
For a low-carb option, try cauliflower mash or roasted vegetables. The dish also shines in slider buns with a spoonful of gravy and a slice of melted cheese for a decadent treat.
For a complete meal, pair with a crisp green salad or roasted asparagus. The savory, earthy flavors of the pork and mushrooms complement bright, acidic sides. Leftovers are fantastic in quesadillas, stuffed into baked potatoes, or layered in a hearty shepherd's pie.

Easy Crockpot Pork Sirloin Roast with Portobello Gravy

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 8 oz portobello mushroom caps, thickly sliced
- 2 tbsp minced garlic
- 2 cups savory brown gravy (canned or homemade)
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the pork sirloin roast in the center of the slow cooker. Arrange the thickly sliced portobello mushroom caps over and around the roast. Sprinkle the minced garlic evenly over the top.
- Pour the savory brown gravy over the roast and mushrooms. Dot the top with the pats of unsalted butter. Do not stir; the layers will meld during cooking.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and easily shreds. The mushrooms should be very soft and the gravy deeply flavored. Let it rest for 3 minutes before slicing.
- Transfer the roast to a cutting board. Use two forks to shred the meat into bite-sized pieces, discarding any large fat chunks. Return the shredded pork to the slow cooker and stir gently to coat with the gravy. Let it rest for 3 minutes before slicing.
- Spoon the shredded pork and mushrooms onto plates or into slider buns. Serve hot, with extra gravy spooned over the top if desired.
