Tips for success

For the best flavor, sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker.

This adds a caramelized crust that deepens the overall taste. While the video shows no searing, this optional step can enhance the dish without changing the core recipe.

If you prefer a thicker gravy, remove the pork and mushrooms from the slow cooker after cooking, then whisk 2 tablespoons of cornstarch with 3 tablespoons of cold water into the remaining liquid.

Simmer on the stovetop until thickened, then return the meat to the pot.

Variations

  • Add Garlic and Herbs: Add 4 minced garlic cloves and 2 teaspoons of dried thyme along with the onion soup mix for an extra layer of savory flavor. Fresh rosemary also works well, but use it sparingly.
  • Spicy Kick: Stir 1 tablespoon of hot sauce or a teaspoon of red pepper flakes into the gravy before pouring it over the pork. This adds a gentle heat that complements the richness.
  • Vegetable Boost: Add 2 chopped carrots and 2 stalks of celery along with the mushrooms for a more substantial one-pot meal. The vegetables will cook down and become tender.
  • BBQ Pulled Pork: After shredding, toss the pork with your favorite barbecue sauce and serve on buns with pickles. This transforms the dish into a classic pulled pork sandwich.

Store leftover pork shoulder in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; simply reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed to loosen it.

This recipe is perfect for meal prep. Cook the pork a day or two ahead, then refrigerate it in the gravy. Reheat gently before serving. You can also freeze the cooked pork in portions for up to 3 months. Thaw overnight in the refrigerator before reheating.

Serving ideas

Serve this pork shoulder over creamy mashed potatoes, egg noodles, or polenta to soak up the delicious gravy.

It also makes fantastic sliders on toasted brioche buns, topped with a little coleslaw for crunch. For a low-carb option, serve it over cauliflower rice or alongside roasted vegetables.

The dish pairs well with a simple green salad or steamed green beans to balance the richness.

A glass of full-bodied red wine, like a Zinfandel or Syrah, complements the savory flavors beautifully. Leftovers are just as good the next day—try them in tacos or on a baked potato.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, this pork shoulder can be cooked a day or two ahead and refrigerated in the gravy. Reheat gently before serving. The flavors actually deepen overnight, making it even more delicious.
Why does the gravy turn out thin?
The gravy may be thin if there is excess liquid from the pork and mushrooms. To thicken it, remove the meat and vegetables, then whisk a cornstarch slurry into the liquid and simmer until thickened.
Can this recipe be made with pork loin instead?
Pork loin is leaner and will not be as tender or juicy as pork shoulder. If using pork loin, reduce the cooking time to 4-6 hours on low and check for doneness early to avoid drying it out.
Does the pork need to be seared first?
Searing is optional but adds a deeper flavor. If you have the time, sear the roast in a hot skillet with a little oil before adding it to the slow cooker. This step is not required for the recipe to work.
What can be used instead of dry onion soup mix?
You can make a substitute by combining 1 tablespoon onion powder, 1 teaspoon garlic powder, 1 teaspoon dried parsley, and a pinch of salt and pepper. This mimics the savory flavor without the packet.

Shredded pork shoulder with mushrooms and gravy in a slow cooker

Ingredients

  • 4 lb boneless pork shoulder roast
  • 1 oz dry onion soup mix
  • 8 oz cremini mushrooms, halved
  • 2 cups beef or pork brown gravy
  • 4 tbsp unsalted butter, cut into pats

Instructions

  1. Place the pork shoulder roast into the bottom of a 6-quart slow cooker. It should fit snugly in a single layer.
  2. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the meat.
  3. Pour the brown gravy over the roast and mushrooms. Dot the top of the roast with the butter pats.
  4. Cover the slow cooker and cook on LOW for 8 to 10 hours, until the pork is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
  5. Remove the roast from the slow cooker and place it on a cutting board. Using two forks, shred the meat into bite-sized pieces, discarding any large fat chunks.
  6. Return the shredded pork to the slow cooker and stir to coat it with the gravy and mushrooms. Let it sit for 5 minutes so the meat absorbs the sauce.
  7. Serve the pork shoulder hot, with the mushrooms and gravy spooned over the top. It is excellent on slider buns, over mashed potatoes, or alongside roasted vegetables.
