Before you start

Before starting, ensure your slow cooker is clean and placed on a stable, heat-resistant surface near an electrical outlet. Have your ingredients measured and ready to go. Because this is a raw poultry dish, keep the turkey in the refrigerator until the moment you are ready to assemble the slow cooker.

Prepare your workspace by laying out paper towels to handle any potential spills. Once the turkey is added, wash your hands thoroughly with warm, soapy water for at least 20 seconds, and sanitize any surfaces or utensils that came into contact with the raw meat to prevent cross-contamination.

Ingredients at a glance (4)
  • 2 lb turkey tenderloins
  • 4 oz diced green chiles
  • 1 packet taco seasoning
  • 1 cup chunky salsa

Instructions

Assembly phase

  1. Load the slow cooker
Place the raw turkey tenderloins into the bottom of the slow cooker. Scatter the diced green chiles evenly over the turkey, then sprinkle the taco seasoning packet over everything. Finally, pour the chunky salsa over the top of the ingredients.
Look for Ensure the salsa covers the turkey evenly to provide enough moisture for cooking.
Tip Avoid adding extra liquid as the salsa and turkey will release enough juice during the slow cooking process.

At this stage, the slow cooker contains the raw turkey layered with green chiles, taco seasoning, and salsa. Check that the turkey is resting directly on the bottom of the cooker to ensure it cooks evenly. The ingredients should look well-distributed, with the salsa providing a moist base for the slow-cooking process. Ensure the lid is securely in place before turning the unit on to the desired heat setting.

Cooking phase

  1. Cook until tender
Cover the slow cooker and cook on low for 4 to 6 hours or high for 2 to 3 hours until the turkey is fully cooked through and reaches an internal temperature of 165°F (74°C).
Look for The turkey should be opaque and easily pull apart with a fork once finished.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the temperature in the thickest part of the tenderloin to ensure it is safely cooked.

During the cooking phase, the kitchen will begin to smell savory and aromatic as the turkey tenderloins absorb the spices and salsa. The meat will slowly transform, becoming increasingly tender as the collagen breaks down.

You should see a significant amount of liquid released from the turkey and salsa, which will help keep the meat succulent. The turkey should appear firm but starting to soften by the time the cooking period concludes.

Finishing phase

  1. Shred and serve
Remove the turkey from the slow cooker and transfer it to a plate or cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded turkey to the slow cooker to coat in the juices before serving in warm taco shells or tortillas.
Look for The meat should be moist and well-coated with the remaining cooking liquid.
Tip Let the shredded meat sit for 5 minutes in the warm juices before serving to allow it to absorb maximum flavor.

Once the turkey reaches 165°F (74°C), it should be incredibly soft and easy to pull apart with two forks. The final mixture should have a rich, reddish hue from the salsa and seasoning, with a consistency that is perfectly shredded and moist. Check that the shredded meat is thoroughly coated in the accumulated juices. It is now ready to be portioned into taco shells or tortillas and served immediately while hot.

Common mistakes

A common mistake is opening the slow cooker lid too frequently, which allows heat to escape and increases the total cooking time significantly. Avoid adding extra water or broth to the cooker, as the salsa provides sufficient moisture; adding too much liquid can dilute the flavors and result in a watery sauce.

Ensure you do not overcook the turkey beyond the point of shredding, as this can make the meat stringy rather than tender. Finally, always verify the temperature with a thermometer rather than relying solely on the clock to ensure food safety.

How to tell it’s done

To determine if the turkey is done, use a digital food thermometer inserted into the thickest part of the tenderloin. The turkey must reach a minimum internal temperature of 165°F (74°C) to be considered safe for consumption.

Visually, the meat should be completely opaque throughout with no signs of pink. When shredded with a fork, the meat should separate easily into thin strands. If the meat offers resistance, it needs to cook for a longer duration until it reaches the proper temperature and desired tender texture.

  • Poultry: 165°F (74°C) in the thickest part
