Before you start

Before you start, make sure your slow cooker is clean and ready. Pat the chicken thighs dry with paper towels if they have excess moisture, but there's no need to season them heavily because the sauce provides plenty of flavor.

Measure out all the sauce ingredients so you can mix them quickly. Have the cornstarch and water ready for the thickening step near the end of cooking. This is a truly hands-off recipe, so the prep is minimal.

Ingredients at a glance (9)
  • 2 lb boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 2 tbsp ketchup
  • 4 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

Prep and Slow Cook

  1. Prepare the Chicken and Sauce
Place the chicken thighs in the slow cooker in a single layer, overlapping slightly if needed. In a small bowl, whisk together the honey, soy sauce, ketchup, minced garlic, apple cider vinegar, and black pepper until smooth. Pour the sauce evenly over the chicken, turning the pieces to coat them well.
Look for The chicken should be well coated with the sauce, and the sauce should be a deep amber color.
Tip Use a spatula to scrape every bit of sauce from the bowl into the crockpot.
  2. Cover and Cook Low and Slow
Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). Avoid opening the lid during cooking to keep the heat steady.
Look for The chicken should be fork-tender and easily shred, but still hold its shape if you want chunks.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If you're short on time, you can cook on high for 2 to 3 hours, but low gives the most tender texture.

At the end of this phase, the chicken should be tender and fully cooked, with an internal temperature of 165°F (74°C). The sauce will look thin and the chicken will be bathed in it.

You should be able to easily pierce the thickest piece with a fork. The aroma will be sweet and savory, filling the kitchen.

Thicken the Glaze

  1. Thicken the Sauce
In a small bowl, mix the cornstarch with the water to make a slurry. Gently stir the slurry into the hot sauce in the slow cooker. Cover again and cook on high for 15 to 20 minutes, until the sauce thickens and turns glossy.
Look for The sauce should coat the back of a spoon and look shiny and thick, not watery.
Tip Stir gently to avoid breaking up the chicken too much. If the sauce is too thick, add a splash of water.

After the cornstarch slurry is stirred in and cooked, the sauce should turn glossy and thick, clinging to the spoon. It should coat the chicken nicely, not run off completely. The color will deepen slightly. The sauce should not taste raw or starchy—if it does, cook a few more minutes.

Serve with Extra Sauce

  1. Finish and Serve
Remove the lid and let the steam rise. Use a spoon to coat the chicken with the thick honey garlic sauce. Transfer the chicken to a serving plate and spoon extra sauce over the top. Cut a piece with a fork to show the juicy interior, then serve hot.
Look for The sauce should be glossy and cling to the chicken, and the meat should be moist and tender.
Tip Serve with rice or steamed vegetables to soak up the extra sauce.

When you lift the lid, steam should rise, and the chicken should look glistening and rich. Spoon the sauce over the chicken to give it a final coat. The meat should be moist and tender, and when cut with a fork, it should yield easily without being dry. The sauce should be thick and glossy on the plate.

Common mistakes

One common mistake is lifting the lid too often during cooking, which lets out heat and extends the cooking time. Another is adding the cornstarch too early; it can clump if the sauce isn't hot enough.

Also, avoid overcooking the chicken if using breasts—they can become dry. Stir gently when adding the slurry so you don't break the chicken into shreds unless you want that texture.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. It should be fork-tender and easily pull apart, but you can leave it in larger pieces if you prefer.

The sauce should be thick enough to coat the back of a spoon. If the sauce is still thin, let it cook a few more minutes with the cornstarch slurry.

  • Poultry: 165°F (74°C) in the thickest part
