Before you start

Before beginning, ensure the slow cooker is clean and positioned on a level, heat-resistant surface. Remove the chicken from the refrigerator about 15 minutes before cooking, but do not leave it out for longer than 30 minutes.

Ensure that all ingredients, including the feta and tomatoes, are ready to be added to the cooker to minimize the time the lid remains off during the assembly phase.

Ingredients at a glance (4)
  • 6 pieces boneless skinless chicken thighs
  • 2 cups cherry tomatoes
  • 2 tbsp Greek seasoning
  • 8 oz feta cheese block

Instructions

Assembly and preparation

  1. Prepare the slow cooker base
Place the boneless skinless chicken thighs in the bottom of the slow cooker, arranging them in a single, even layer so they cook uniformly throughout the process.
Look for Chicken pieces should lie flat edge to edge.
Tip Pat the chicken dry with paper towels before placing it in the cooker for better texture.

The chicken thighs should be arranged in a single layer at the bottom of the slow cooker. The tomatoes should be distributed evenly, and the block of feta should be placed securely in the center. Ensure the lid is positioned correctly to create a proper seal before starting the cooking cycle.

Slow cooking cycle

  1. Add aromatics and seasoning
Scatter the cherry tomatoes over the chicken. Sprinkle the Greek seasoning evenly across the surface. Place the block of feta cheese directly in the center of the slow cooker.
Look for The feta block should be centered surrounded by the tomatoes.
Tip Use a high-quality Greek seasoning blend for the best depth of flavor.

During the cooking phase, the slow cooker will maintain a steady temperature. The tomatoes will begin to release their juices, and the feta will slowly soften and melt.

You should observe the accumulation of a flavorful, aromatic liquid base that begins to coat the chicken pieces as the hours progress.

Finishing and serving

  1. Slow cook and serve
Cover the slow cooker and cook on low for 4 hours. Once the time is up, ensure the chicken reaches an internal temperature of 165°F (74°C). Let the chicken rest for 5 minutes before serving to ensure tenderness.
Look for The tomatoes should be burst and the feta should be melted into a creamy sauce.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin, stir the melted feta gently before serving.

At the end of the cooking time, the cherry tomatoes should be completely burst, and the feta should be fully integrated into a thick, creamy sauce. The chicken should be perfectly tender and coated in the sauce. Check the internal temperature, allow for a brief rest, and prepare to serve immediately.

Common mistakes

A common mistake is using pre-crumbled feta, which will not melt into the desired creamy sauce consistency. Another error is overcrowding the slow cooker with too many layers of chicken, which prevents even cooking and can result in uneven texture.

Finally, avoid lifting the lid frequently during the cooking process, as this releases heat and steam, significantly increasing the total cooking time and potentially affecting the final texture of the dish.

How to tell it’s done

The chicken is done when the meat is opaque throughout and pulls apart easily with a fork. Using a digital meat thermometer is the most reliable way to check for readiness; insert the probe into the thickest part of the thigh.

The internal temperature must reach 165°F (74°C) to ensure it is safe to eat. Once this temperature is achieved, allow the chicken to rest for five minutes to lock in the juices.

  • Poultry: 165°F (74°C) in the thickest part
