Before you start

Before starting, ensure you have all ingredients measured and ready to go. The chicken should be thawed completely if it was frozen, as adding frozen meat to a slow cooker is not recommended for food safety.

Clear a space on your countertop near an electrical outlet for the slow cooker, and ensure the insert is clean and dry. Having your measuring cups and spoons within reach will make the assembly process move quickly and efficiently, allowing you to get the meal started in just a few minutes.

Ingredients at a glance (4)
  • 1 1/2 lb chicken breast, cubed
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • 1/2 cup hoisin sauce

Instructions

Assembly

  1. Prepare the slow cooker
Place the cubed chicken pieces into the base of the slow cooker, ensuring they are spread out in an even layer to promote consistent cooking throughout the process.
Look for Chicken is arranged in a single layer at the bottom of the insert.
Tip Ensure the chicken is cut into uniform cubes to help it cook at the same rate.

The chicken is evenly distributed in the slow cooker, and the sauce ingredients are layered on top. Everything is properly positioned and ready for the long, slow cooking process to begin.

Simmering

  1. Add the seasonings and sauce
Drizzle the honey evenly over the chicken, followed by the red pepper flakes and the hoisin sauce. Do not stir at this stage to keep the sauce concentrated on top.
Look for The sauce and seasonings are clearly visible over the raw chicken.
Tip Use a silicone spatula to scrape the measuring cup clean so none of the hoisin is wasted.

The kitchen should begin to smell savory and slightly sweet as the hoisin and honey heat up. The chicken is slowly braising in the sauce, becoming tender and fully infused.

Finishing

  1. Cook and serve
Cover the slow cooker and cook on low for 4 hours. Once finished, ensure the internal temperature of the chicken reaches 165°F (74°C). Let the chicken rest for 5 minutes before serving to allow the juices to redistribute and the sauce to thicken slightly.
Look for The sauce is glossy and the chicken is tender and fully cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Stir the chicken gently in the sauce before serving to coat every piece evenly.

The chicken is fully cooked and tender, with a thick, glossy sauce coating each piece. It is now ready to be portioned out and served while hot for your meal.

Common mistakes

A common mistake is overcrowding the slow cooker with pieces that are too large, which prevents the heat from circulating properly and leads to uneven cooking.

Avoid the temptation to remove the lid frequently during the cooking process, as this releases heat and moisture, significantly increasing the total cooking time.

Additionally, do not add too much liquid, as the chicken will release its own juices, which will thin out the sauce if the initial proportions are not followed correctly.

How to tell it’s done

The chicken is done when it is opaque throughout and reaches an internal temperature of 165°F (74°C). Use a meat thermometer to check the thickest piece of chicken. At this stage, the sauce should appear glossy and slightly thickened, clinging to the pieces of meat.

If the chicken is not quite there, continue cooking in 15-minute increments until the safe internal temperature is reached, ensuring the dish is both safe and delicious for serving.

  • Poultry: 165°F (74°C) in the thickest part
