Before you start

Before beginning, ensure your slow cooker insert is clean and properly seated. Prepare the chicken by trimming any excess fat and cutting it into uniform, bite-sized chunks. Rinse the canned beans thoroughly under cold running water to remove excess sodium and starch, then drain them well.

Have your spices measured and ready to go, and ensure your enchilada sauce is at room temperature for easier pouring. Having all ingredients prepped beforehand makes the assembly process incredibly quick and efficient.

Ingredients at a glance (6)
  • 2 lbs boneless skinless chicken breasts, cut into chunks
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 cup yellow corn, fresh or frozen
  • 1 tbsp ground cumin
  • 19 oz red enchilada sauce

Instructions

Layering the ingredients

  1. Combine ingredients in the slow cooker
Place the raw chicken breast chunks into the base of the slow cooker. Add the black beans, pinto beans, and yellow corn on top of the chicken in an even layer to ensure consistent cooking.
Look for Ingredients should be layered but not yet mixed.
Tip Ensure the chicken is cut into uniform pieces so it cooks through at the same rate.

At this stage, the slow cooker contains a neat arrangement of raw chicken, beans, and corn. The ingredients should be distributed evenly to ensure they cook at the same rate.

Check that the chicken is at the bottom to maximize contact with the heat source, which is essential for proper cooking. Everything should look clean and organized before the seasoning and sauce are added to the mix.

Seasoning and saucing

  1. Season and add the sauce
Sprinkle the ground cumin evenly over the beans and corn. Pour the red enchilada sauce over the entire mixture, making sure the sauce reaches the bottom of the insert to prevent the chicken from sticking.
Look for The sauce should cover the majority of the ingredients.
Tip Use a spatula to gently press down any ingredients that are not fully submerged in the sauce.

Once the cumin is sprinkled and the enchilada sauce is poured over, the ingredients should be partially submerged. The sauce should be evenly distributed so that it coats the chicken and beans. Ensure that there is no dry chicken visible on top; if necessary, gently nudge the ingredients down into the liquid. The chili is now ready to begin the slow cooking process under the lid.

Cooking and resting

  1. Slow cook and serve
Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours. Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving. Let the chili rest for 5 minutes before portioning into bowls.
Look for The chicken is opaque and white throughout with no pink remaining.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chili is too thick, stir in a splash of chicken broth or water before serving.

After the cooking time, the chili should be bubbling gently with a rich, red color and a pleasant aroma. The chicken will look tender, and the sauce should be thick. Before serving, verify the internal temperature of the chicken with a thermometer. Let the dish rest for five minutes to allow the sauce to settle and the flavors to integrate before portioning it into bowls for serving.

Common mistakes

Avoid overcooking the chicken, which can lead to a dry, stringy texture even in a slow cooker. While the process is forgiving, checking the temperature once the suggested time has passed is crucial.

Another common mistake is failing to rinse the canned beans, which can result in a cloudy, salty sauce. Always rinse them well and let them drain completely to keep the flavors clean and the consistency of the chili thick and appealing.

How to tell it’s done

The chili is ready when the chicken is fully cooked through and opaque white with no traces of pink. Use a meat thermometer to verify that the thickest piece of chicken has reached an internal temperature of at least 165°F (74°C).

The beans should be tender but still hold their shape, and the sauce should have thickened slightly around the other ingredients, creating a rich, uniform texture that is ready to be served hot.

  • Poultry: 165°F (74°C) in the thickest part
