Before you start

Before starting, ensure your slow cooker is clean and placed on a stable, heat-resistant surface near an electrical outlet. Remove the beef roast from the refrigerator about 30 minutes before cooking to allow it to temper slightly, which helps with even cooking.

Have your two forks ready for the shredding stage, and make sure you have a serving platter prepared. Verify that the slow cooker lid fits securely to maintain the necessary heat and moisture levels throughout the long cooking process.

Ingredients at a glance (4)
  • 3 lb beef roast, such as chuck roast
  • 4 tbsp butter, sliced
  • 1 packet ranch seasoning mix
  • 1 cup buffalo sauce

Instructions

Layering the ingredients

  1. Assemble the ingredients
Place the beef roast into the base of the slow cooker. Arrange the butter slices directly on top of the beef. Sprinkle the ranch seasoning packet evenly over the meat and butter, then pour the buffalo sauce over the top.
Look for The ingredients are layered in the slow cooker with the sauce coating the top.
Tip Ensure the roast fits comfortably in your slow cooker insert for even cooking.

The ingredients should be layered carefully in the slow cooker, with the seasoning and sauce distributed over the roast. Ensure the roast is sitting flat in the insert to maximize surface contact with the heat source. At this stage, the slow cooker is ready to be covered and started. Verify that the power cord is connected and the setting is adjusted to the appropriate heat level for your chosen cooking time.

Slow cooking process

  1. Slow cook the beef
Cover the slow cooker with the lid. Cook on the low setting for 8 hours or on high for 4 to 5 hours until the meat is fork-tender and reaches an internal temperature of 145°F (63°C). Once cooked, let the meat rest at least 3 minutes.
Look for The beef should be easily pulled apart with two forks.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid opening the lid frequently, as this releases heat and increases the cooking time.

During the slow cooking phase, the beef will release its own juices, which combine with the buffalo sauce and butter. The kitchen will begin to smell savory and spicy as the flavors develop.

Periodically check that the slow cooker is functioning correctly, but avoid opening the lid. The meat should be submerged partially in the sauce, and you should hear a gentle bubbling sound as the cooking progresses toward completion.

Shredding and finishing

  1. Shred and serve
Remove the beef from the slow cooker and transfer it to a large plate or cutting board. Use two forks to shred the beef into bite-sized pieces, then return the shredded meat to the slow cooker to toss with the remaining sauce before serving.
Look for The beef is fully shredded and coated in the spicy sauce.
Tip Discard any excess large pieces of fat while shredding for a cleaner texture.

Once the beef is tender, it should be moved to a board for shredding. The meat should be soft enough to fall apart under light pressure from two forks. After shredding, the meat is returned to the pot to absorb the remaining sauce. The final result should be a uniform, glossy, and well-coated shredded beef that is warm and ready to be served immediately to your guests.

Common mistakes

A common mistake is overcrowding the slow cooker with a roast that is too large, which can lead to uneven cooking. Ensure the lid stays closed for the majority of the cooking time; opening it repeatedly lets out steam and heat, significantly increasing the total cook time.

Another error is failing to rest the meat before shredding, which can cause the juices to escape, leading to a drier final dish. Always allow the meat to rest for at least 5 minutes after removing it from the slow cooker.

How to tell it’s done

The beef is ready when it reaches an internal temperature of at least 145°F (63°C). Beyond the temperature, the texture is the primary indicator of doneness. Use two forks to test the meat; if it pulls apart easily with minimal resistance, it is perfectly cooked.

If the meat feels tough or stringy, it may need to cook for an additional 30 to 60 minutes to further break down the collagen and achieve the ideal, tender shredded consistency.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
