Before you start

Before starting, ensure your slow cooker is clean and placed on a stable surface away from other appliances. Take the beef roast out of the refrigerator about 20 minutes before you are ready to assemble the ingredients so it is not ice-cold when it goes into the cooker.

Gather your measuring cups and have your barbecue sauce and seasoning ready nearby to make the assembly process quick and efficient.

Ingredients at a glance (5)
  • 3 lb beef chuck roast
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 tbsp steak seasoning
  • 1 cup hickory barbecue sauce

Instructions

Preparation and assembly

  1. Assemble the ingredients
Place the beef chuck roast into the bottom of the slow cooker. Pour the apple cider vinegar and water over the meat to provide moisture for the cooking process.
Look for The meat should lie flat at the bottom of the cooker.
Tip Ensure the roast fits comfortably inside the slow cooker base.

At this stage, the beef sits at the bottom of the slow cooker, moistened by the vinegar and water. The seasoning is applied, and the barbecue sauce is poured over. Everything should look ready to begin the slow, steady transformation into a tender roast.

Slow cooking process

  1. Season and add sauce
Evenly sprinkle the steak seasoning over the surface of the beef. Pour the hickory barbecue sauce over the top, ensuring it covers the meat to distribute the smoky flavor.
Look for The sauce should coat the top of the roast.
Tip Spread the sauce slightly with a spoon if it does not cover the edges.

During the long cooking phase, the beef gradually softens as the connective tissues break down. The kitchen will begin to fill with the savory aroma of the barbecue sauce and spices. Check occasionally to ensure the slow cooker remains on the low setting.

Shredding and serving

  1. Cook and serve
Cover the slow cooker and cook on low for 8 hours until the beef is tender. Check that the internal temperature reaches 145°F (63°C). Let the beef rest for at least 5 minutes before shredding with two forks.
Look for The beef should be easily pulled apart with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the beef feels firm, continue cooking for another 30 minutes.

Once finished, the beef is tender and ready to be shredded. It should look glossy and dark from the barbecue sauce. Ensure the meat is fully pulled apart and well-coated in the pan juices before you transfer it to your serving plates.

Common mistakes

Avoid lifting the lid frequently during the cooking process, as this releases steam and significantly increases the total cooking time.

Do not attempt to shred the beef immediately after removing it from the slow cooker; letting it rest for at least 5 minutes allows the juices to redistribute, ensuring the meat remains moist.

Also, be careful not to crowd the cooker with too much liquid, as the beef will release its own juices while cooking.

How to tell it’s done

The beef is considered done when it reaches an internal temperature of 145°F (63°C) and the meat fibers pull apart easily with the gentle pressure of two forks.

If the roast still feels resistant to shredding, it likely needs more time; continue cooking in 30-minute increments. The texture should be soft, juicy, and coated in a glossy, thickened sauce before serving on plates.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
