Before you start

Before beginning the assembly, ensure the oven is fully preheated to 375°F (190°C). Clear a clean, flat surface to work on and have all ingredients measured and ready, as the assembly process is quite fast.

Ensure the baking dish is clean and dry; there is no need to grease the dish as the crescent dough contains enough fat to prevent sticking, but using a piece of parchment paper can make removing the bars much easier if desired.

Ingredients at a glance (4)
  • 2 cans refrigerated crescent dough, store-bought or made ahead
  • 1 cup semisweet chocolate chips
  • 2 cups pecan pie filling
  • 1 cup pecan halves

Instructions

Crust Preparation

  1. Prepare the Crust
Preheat the oven to 375°F (190°C). Unroll the refrigerated crescent dough sheets and press them firmly into the bottom of a 9x13 inch baking dish, ensuring the seams are sealed to create a solid base.
Look for The dough should cover the entire bottom of the dish in an even layer.
Tip If the dough tears, simply pinch the edges together with your fingers to seal it back up.

The crescent dough should be pressed firmly into the bottom of the dish, covering the entire surface area. All seams should be pinched shut to create an even, solid foundation. The dough should look smooth and uniform, ready to support the weight of the chocolate and the thick, heavy pecan filling.

Filling Assembly

  1. Assemble the Bars
Scatter the semisweet chocolate chips evenly over the raw crescent dough. Pour the thick pecan pie filling over the chips, ensuring it covers the entire surface. Arrange the pecan halves in a single, loose layer on top of the filling.
Look for The filling should be distributed evenly to ensure every square gets enough pecans.
Tip Use the back of a spoon to gently spread the filling if it does not reach the corners.

The chocolate chips should be spread in an even layer, followed by the pecan pie filling. The filling must be poured slowly to ensure it coats the chocolate and reaches the corners.

Finally, the pecan halves should be arranged neatly on top, covering the filling completely to create a beautiful, textured surface.

Baking and Cooling

  1. Bake and Cool
Place the baking dish into the preheated oven and bake for approximately 30 minutes, or until the edges are golden brown and the center is set. Remove from the oven and allow the bars to rest for at least 30 minutes before slicing into squares.
Look for The filling should appear bubbly and the crust should be a deep golden brown.
Tip Letting the bars cool completely is essential for getting clean, neat slices.

After 30 minutes in the oven, the bars should be golden brown and the filling should be set. The kitchen will smell like toasted pecans and caramelized sugar. After removing from the oven, the bars must sit undisturbed for 30 minutes to allow the filling to cool and reach the perfect, chewy consistency.

Common mistakes

A common mistake is failing to seal the seams of the crescent dough, which can cause the filling to leak underneath the crust. Another error is rushing the cooling process; slicing the bars while they are still hot will cause the filling to run, resulting in messy squares.

Additionally, ensure the pecans on top are arranged in a single layer, as stacking them too high may result in uneven browning and some nuts burning before others are toasted.

How to tell it’s done

The bars are finished when the crescent dough crust is a deep, golden brown color and the pecan filling has bubbled and set in the center.

A toothpick inserted into the center of the filling should come out mostly clean with only a few moist crumbs. The filling will continue to firm up as it cools, so do not overbake, or the edges may become too dark and tough.
