Before you start

Before you begin, ensure your oven is fully preheated to 375°F (190°C) to allow for even cooking.

Have all your ingredients prepped and ready: measure out the shredded chicken and cheese, and ensure your tortilla wedges are cut to a size that fits comfortably in your baking dish.

Having everything organized on your counter will make the assembly process smooth and efficient, allowing you to get the dish into the oven quickly.

Ingredients at a glance (4)
  • 8 large flour tortillas, cut into wedges
  • 3 cups shredded cooked chicken
  • 1 cup creamy jalapeno sauce
  • 2 cups shredded Mexican-blend cheese

Instructions

Assembly of the base

  1. Prepare the base
Preheat your oven to 375°F (190°C). Arrange the flour tortilla wedges in an even, overlapping layer across the bottom of a 9x13 inch baking dish to create a solid foundation for the casserole.
Look for The dish bottom should be completely covered by the tortilla pieces.
Tip Ensure the pieces overlap slightly so the sauce does not leak through to the bottom of the dish.
  2. Add chicken and sauce
Scatter the shredded cooked chicken evenly over the layer of tortilla wedges. Pour the creamy jalapeno sauce over the chicken, making sure to distribute it across the entire surface of the dish to ensure every bite is flavorful.
Look for The sauce should be spread across the top layer of chicken.
Tip Use a spoon to spread the sauce if it does not pour evenly.

At this stage, the bottom of the dish is covered with a neat layer of tortilla wedges, and the chicken and sauce are evenly distributed on top. Ensure the sauce has reached the edges of the chicken layer to prevent dry spots during the baking process.

Adding the cheese topping

  1. Top with cheese
Sprinkle the shredded Mexican-blend cheese generously over the chicken and sauce layer, ensuring the entire top is covered for an even melt.
Look for The cheese should form a thick, uniform layer covering all ingredients.
Tip Do not pack the cheese down too firmly, as a loose layer will melt more evenly.

The cheese should be spread in an even, thick layer that covers the entire surface of the chicken and sauce. Check that there are no large gaps at the corners where the filling might burn before the cheese has a chance to melt properly.

Baking until golden

  1. Bake the casserole
Place the baking dish in the preheated oven and bake until the edges are bubbling and the cheese is melted and golden brown. Ensure the internal temperature of the chicken reaches 165°F (74°C). Remove from the oven and let rest for 5 minutes before serving.
Look for The edges should be bubbling and the top should be golden brown.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to check the temperature of the chicken in the center of the dish.

The final dish should appear golden brown on top with bubbling sauce visible around the sides. The cheese should be completely melted and slightly browned in spots, and the entire casserole should look firm and stable when gently shaken.

Common mistakes

Avoid over-crowding the baking dish or using too much sauce, which can lead to a soggy base. The tortilla wedges should overlap slightly, but not be piled up too high, as this prevents the heat from circulating properly through the layers.

Another common mistake is failing to let the dish rest after baking; cutting into it immediately will cause the layers to slide apart and the sauce to run, so patience is key for the perfect presentation.

How to tell it’s done

The bake is done when the cheese is fully melted and has developed a light golden-brown color on top, and the edges are actively bubbling. The internal temperature of the chicken should reach at least 165°F (74°C).

Using a food thermometer inserted into the center of the dish is the most accurate way to ensure safety. Let the dish rest for about 5 minutes before cutting to allow the layers to settle, making it much easier to serve neat, firm squares.
