Before you start

Before beginning, ensure that all ingredients are measured and ready on your workspace to streamline the assembly process. If using refrigerated dough, keep it chilled until the very last moment to prevent it from becoming too sticky or difficult to handle.

Have your baking sheet lined and ready, and preheat the oven to the required temperature. If you are using leftover chicken, ensure it is shredded or sliced into thin, manageable pieces that will not cause the braid to become bulky or uneven during the shaping process.

Ingredients at a glance (4)
  • 2 cans crescent roll dough, store-bought or made ahead
  • 2 cups cooked chicken breast, shredded or sliced
  • 6 slices deli ham
  • 6 slices Swiss cheese

Instructions

Pastry preparation

  1. Prepare the pastry base
Preheat the oven to 375°F (190°C). Line a large baking sheet with aluminum foil to ensure easy cleanup. Unroll the crescent roll dough on the prepared baking sheet, pressing the seams together to form a large, unified rectangular sheet of dough to serve as the base for the braid.
Look for The dough should form a smooth, even rectangle on the foil.
Tip If the dough tears, simply pinch the seams together with your fingers to seal it completely.

The dough should be laid out on the baking sheet as a single, uniform rectangle. Ensure that the seams are pressed together firmly so that the braid does not pull apart during baking. The surface should be smooth and ready for the filling ingredients.

Layering the ingredients

  1. Assemble the layers
Arrange the deli ham slices down the center of the dough. Layer the cooked chicken breast strips evenly over the ham. Place the Swiss cheese slices on top of the chicken to ensure maximum meltiness during the baking process. Carefully cut diagonal strips along the sides of the dough to facilitate the braiding process.
Look for The layers should be centered to allow enough dough on the sides for braiding.
Tip Ensure the chicken is evenly distributed so every slice of the finished braid contains all ingredients.

The ham, chicken, and Swiss cheese should be arranged in a neat, centered column. The diagonal strips of dough should be cut evenly on both sides to allow for a symmetrical braid. Check that there is enough dough on each side to reach across the filling.

Baking the braid

  1. Braid and bake
Fold the dough strips over the filling, alternating sides to create a classic braided appearance. Seal the ends tightly to prevent cheese leakage. Bake in the preheated oven until the pastry is golden brown and the cheese is fully melted, reaching an internal temperature of 165°F (74°C) for the chicken. Remove from the oven and let rest for 5 minutes before slicing.
Look for The pastry should be deep golden brown and the cheese bubbly.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the internal temperature of the chicken in the center to ensure it is cooked through.

The final product will be a golden, crispy pastry with a firm structure. The cheese should be visible through the gaps in the braid, melted and slightly browned. Ensure the internal temperature has reached the safe threshold for poultry before removing it from the oven.

Common mistakes

Avoid overstuffing the braid, as this can prevent the dough from sealing properly and cause the filling to leak out onto the baking sheet. Another common mistake is failing to seal the edges of the dough; ensure the strips are pressed firmly against the opposite side to maintain the structure.

Do not skip the resting period after removing the braid from the oven, as this allows the cheese to set slightly, making it much easier to slice without the filling spilling out onto the serving platter.

How to tell it’s done

The braid is considered done when the pastry has reached a deep, golden-brown color throughout, indicating that the layers have puffed and crisped. The cheese should be bubbling and fully melted.

Using a meat thermometer is the most reliable method for checking the center; the chicken must reach an internal temperature of at least 165°F (74°C).

If the pastry is browning too quickly before the filling is heated through, loosely cover the top with a piece of foil for the final few minutes of baking.

  • Poultry: 165°F (74°C) in the thickest part
