Before you start

Before you begin, ensure your oven is preheated to the correct temperature. Gather all your ingredients on the counter, making sure the chicken is shredded and the ham is sliced into manageable pieces.

Prepare your baking sheet by lining it with aluminum foil to prevent sticking and simplify the cleanup process later. Having everything ready to go will make the assembly phase much smoother and help you maintain the proper temperature of the dough while you work.

Ingredients at a glance (4)
  • 1 can refrigerated crescent roll dough, store-bought or made ahead
  • 1 cup cooked shredded chicken breast
  • 4 slices deli ham
  • 4 slices Swiss cheese

Instructions

Dough Preparation

  1. Prepare the Dough
Preheat the oven to 375°F (190°C). Line a baking sheet with aluminum foil. Unroll the crescent roll dough on the prepared sheet, pressing the seams together to form a large, flat rectangle of dough.
Look for The dough should form a flat, even rectangle with no visible gaps.
Tip If the dough is sticky, lightly flour your fingers to prevent tearing.

The dough should look smooth and uniform on the baking sheet. Ensure there are no holes or tears in the rectangle, as these could allow the cheese to escape. The surface should be flat and ready for the layers of ingredients to be added. If the dough feels too warm or sticky, pause and place the entire baking sheet in the refrigerator for a few minutes to firm it up, which makes the braiding process much easier to manage.

Assembly and Braiding

  1. Assemble the Braid
Layer the Swiss cheese slices down the center of the dough. Top with the shredded chicken and ham slices. Cut diagonal strips along the sides of the dough and fold them over the filling in a braid pattern, sealing the ends tightly.
Look for The filling should be fully encased by the dough strips.
Tip Ensure the ends are well sealed so the cheese does not leak out during baking.

The assembled braid should look cohesive, with the dough strips neatly overlapping the chicken, ham, and cheese. The braid should feel secure, and the ends should be tucked under firmly to contain the filling.

Smell for the aroma of the dough and ham as you work. Check that the cheese is distributed evenly along the center strip so that every slice will have a good amount of filling. The overall appearance should be symmetrical and ready for the oven.

Baking and Finishing

  1. Bake the Pastry
Place the baking sheet in the oven and bake for 20 minutes, or until the pastry is golden brown and the internal temperature of the chicken reaches 165°F (74°C). Remove from the oven and let rest for 5 minutes before slicing.
Look for The crust should be deep golden brown and the cheese bubbly.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the internal temperature with a thermometer to ensure it is fully heated through.

As the braid bakes, it will puff up and turn a rich golden brown. You should notice the scent of buttery pastry and melted cheese filling the kitchen. The edges should be crisp, and the cheese should appear fully melted. Before removing it from the oven, check the internal temperature of the filling to ensure it is hot throughout. Once done, the braid should look firm, hold its shape when lifted, and have a beautiful, appetizing sheen on the crust.

Common mistakes

One common mistake is leaving gaps between the dough seams, which can cause the filling to leak out during the baking process. Always press the seams firmly together to create a solid surface.

Another mistake is overcrowding the filling, which prevents the dough from sealing correctly and can result in a soggy interior. Avoid using frozen chicken that has not been fully thawed and cooked, as the excess moisture will ruin the texture of the pastry and prevent it from becoming crisp.

How to tell it’s done

The braid is done when the crescent dough is a deep, uniform golden brown color across the entire surface. The cheese should be completely melted and slightly bubbly, indicating that the heat has permeated the center of the braid.

Use a food thermometer to check the internal temperature of the chicken mixture, which must reach at least 165°F (74°C) to ensure it is thoroughly heated. Allow the pastry to rest for at least 5 minutes before slicing to let the cheese set slightly.

  • Poultry: 165°F (74°C) in the thickest part
