Before you start

Before beginning, ensure your oven is fully preheated to 400°F (200°C). Gather your ingredients and have your parchment-lined baking sheet ready.

If your dough was refrigerated, let it sit on the counter for at least 30 minutes to reach room temperature, which makes it much easier to stretch and roll without snapping back.

Having all components measured and ready to go streamlines the assembly process, preventing the dough from drying out while you prepare the fillings.

Ingredients at a glance (6)
  • 1 lb crust dough, store-bought or made ahead
  • 1/2 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 4 oz pepperoni slices
  • 2 tbsp unsalted butter, melted
  • 1 tsp dried Italian herbs

Instructions

Preparing the dough base

  1. Prep the crust dough
Preheat the oven to 400°F (200°C). On a lightly floured work surface, roll out the crust dough into an even rectangle measuring roughly 10 by 14 inches. Keep the thickness consistent across the surface to promote even baking throughout the center of the roll.
Look for dough is rolled into an even rectangle
Tip If the dough keeps shrinking back, let it rest for five minutes to allow the gluten to relax before rolling again.

The dough should be smooth, elastic, and rolled out into an even rectangle. Check that there are no thin spots or tears in the center, as these could lead to leaks during the baking phase. The surface should be lightly floured to prevent sticking to your work area.

Filling and sealing the log

  1. Fill and roll the layers
Spread the marinara sauce evenly across the dough, leaving a clean one-inch border along all edges. Scatter the shredded mozzarella cheese over the marinara and layer the pepperoni slices evenly across the top. Roll the dough tightly into a uniform log, folding both ends underneath to lock in the filling. Set the log seam-side down onto a parchment-lined baking sheet.
Look for filling is evenly distributed and the log is sealed
Tip Dab a few drops of water on the border edges to help create a firm, tight seal before rolling.

The filling should be centered with a clean border around the edges. When rolling, ensure the log is tight and that the final seam is pressed firmly against the bottom of the dough to prevent it from opening in the oven. The log should look uniform in shape.

Baking to golden perfection

  1. Brush herb butter and bake
Stir together the melted unsalted butter and dried Italian herbs until combined. Brush the herb butter thoroughly over the entire exterior of the stromboli. Bake for 20 to 25 minutes until the crust turns blistering golden brown and the cheese is hot and bubbling. Transfer the sheet from the oven and let the stromboli rest for 5 minutes before slicing with a serrated knife.
Look for crust is blistering and golden brown
Tip Slice with gentle sawing motions using a serrated knife to keep the layers neat and intact.

The crust should be golden brown and fragrant with the scent of herbs and butter. The cheese should be bubbling through any small vents in the dough. Ensure the bottom is cooked through and crisp before removing it from the oven to cool slightly on a wire rack.

Common mistakes

A common mistake is overloading the dough with too much sauce, which can lead to a soggy crust. Use a light hand when spreading the marinara. Another error is failing to seal the edges properly; take your time to pinch the dough shut to prevent leaks.

Finally, avoid slicing the stromboli immediately after it comes out of the oven, as the steam needs a moment to dissipate and the cheese needs to stabilize to ensure the filling stays inside the crust.

How to tell it’s done

The stromboli is perfectly done when the exterior crust is deep golden brown and feels firm to the touch. The internal temperature of the cheese should be piping hot and fully melted, and the bottom of the crust should be crisp, not doughy.

Always allow the stromboli to rest for at least 5 minutes before slicing to prevent the cheese filling from running out, allowing the internal structure to set slightly for cleaner, more attractive slices.
