Before you start

Before you begin, preheat your oven to 375°F (190°C) so it is ready to bake the casserole to golden perfection. Cook the rotini pasta in salted boiling water according to the package directions for al dente, then drain it thoroughly.

Shred your pre-cooked chicken and measure out the black beans, corn, creamy salsa, and shredded cheese. Grease a 9x13-inch baking dish lightly with cooking spray to prevent sticking.

Ingredients at a glance (6)
  • 8 oz rotini pasta, cooked and drained
  • 2 cups shredded cooked chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup whole kernel corn, drained
  • 1 1/2 cups creamy salsa
  • 2 cups shredded Mexican blend cheese, divided

Instructions

Mixing the Ingredients

  1. Combine the Base Ingredients
In a large mixing bowl, combine the cooked rotini pasta, shredded cooked chicken, drained black beans, and drained corn. Stir the ingredients gently with a large spoon to distribute them evenly throughout the bowl.
Look for The ingredients should be uniformly mixed.
Tip Use a large bowl to prevent spilling while mixing.
  2. Incorporate the Creamy Salsa
Pour the creamy salsa over the pasta and chicken mixture. Stir thoroughly until the salsa completely coats all the ingredients, ensuring there are no dry pockets of pasta left.
Look for The mixture should look creamy and fully coated.
Tip If the mixture looks dry, add a splash of chicken broth.

The pasta, shredded chicken, black beans, and corn should be evenly distributed throughout the large bowl.

The creamy salsa must thoroughly coat every ingredient, creating a uniform, glossy mixture with no dry spots of pasta visible before transferring it to the baking dish.

Assembling the Casserole

  1. Transfer to the Baking Dish
Spread the creamy pasta mixture evenly into a greased 9x13-inch baking dish. Use the back of your spoon to smooth the top into a flat, uniform layer.
Look for The pasta should fill the dish evenly.
Tip Grease the dish well to make cleanup easier.
  2. Top with Shredded Cheese
Scatter the shredded Mexican blend cheese evenly over the top of the pasta mixture, covering it completely from edge to edge.
Look for The cheese should form a solid, even layer.
Tip Use freshly shredded cheese for the best melt.

The pasta mixture should be spread in an even, flat layer in the baking dish. The remaining shredded cheese must be scattered uniformly across the top, completely covering the pasta and filling any gaps to ensure a beautiful, even cheese melt.

Baking to Perfection

  1. Bake Until Bubbly
Bake the casserole in the preheated oven at 375°F (190°C) for 20 minutes. The cheese should be completely melted and bubbling at the edges, and the poultry must reach a safe internal temperature of 165°F (74°C).
Look for The cheese is bubbly and golden brown.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Broil for the last 2 minutes if you prefer a browner crust.

The casserole is ready when the cheese on top is fully melted, bubbling vigorously around the edges, and starting to turn a light golden brown. Steam should rise gently from the center of the dish, and the interior should be piping hot.

Common mistakes

One common mistake is overcooking the pasta during the boiling stage. Because the pasta bakes in the oven with the sauce, it will continue to cook slightly. If it is already soft before baking, it will turn mushy.

Always cook the pasta to al dente. Another mistake is not draining the black beans and corn properly, which can release excess moisture and make the creamy sauce watery.

How to tell it’s done

To ensure the casserole is completely safe and ready to serve, check that the internal temperature of the chicken in the center of the dish reaches 165°F (74°C).

The cheese on top should be entirely melted, bubbly, and lightly browned. Let the casserole rest for about 5 minutes after removing it from the oven to let the sauce set slightly before serving.

  • Poultry: 165°F (74°C) in the thickest part
